yesterday's lunch was S&S saimin--the kind in the styrofoam bowl where all you gotta do is add hot water. i dumped in a few cubes of tofu, a slice of roast beef, a slice of ham from the salad bar for protein.

eric was kind enough to say he felt a lil guilt eating his "> 1 lb" mini plate bcs he knew my lunch was nowhere near as good as his.

I dunno. I like Zippy's chili and Koala Moa chicken, both common fundraising dishes. And there's a church in Pearl City that does a big Hawaiian plate every April that's pretty darn good!

As for lunch... Genki Sushi at Ala Moana!

After Mass today, we ventured into Waikiki to check out "MAC 24/7 (http://www.mac247waikiki.com/)." The "MAC" stands for "modern American cuisine," and the place is aiming for a bizarre combination of modern trendy nightspot and retro comfort food diner. It's in the Hilton Waikiki Prince Kuhio Hotel (former Trellises spot in the former Radisson Waikiki at 2500 Kuhio Ave.).

Their signature is their ginormous "mac daddy" pancakes. The Advertiser described them as being the size of "area rugs," and they're not kidding. At least 18 inches across. Various combos include basic blueberry, the "Elvis" (peanut butter and bacon), and the banana, pecan and chocolate (which is what we ordered). A quarter of this monster fed both my wife and I. The rest is weighing down the shelf in our fridge.

I gather that they're going for quantity rather than quality, as the pancakes weren't exactly fluffy, and without butter, pretty dry without a massive syrup pour. Turns out the most popular dish on our table was my youngest son's simple bacon, eggs and toast!

Breakfast is a big part of the menu (and I like any place I can get breakfast at 3 p.m.), with other dishes like meatloaf, lobster pot pie, fried chicken and waffles, baked goods, soups, and salads. The saimin bowl? Big enough for a small child to swim in. Of course, it's also a nightspot, so there's a long shiny bar for the beautiful people.

Valet parking is free (just tip well), though we ended up leaving at 11 a.m. That's checkout time at the hotel, and the valet was a madhouse!

Oh, that chicken adobo looks yummy. Is it a little on the red side? Did you put something tomatoey in there?

I used Stew Chicken today. For faster cooking, use Chicken Thighs.

Cover with Water.
1 cup apple cider vinegar
1 cup shoyu
Paprika as much as you like for redness.;)
2-3 crushed ginger
2-3 crushed cloves garlic
2-3 whole Bay Leaves
1/2 sliced round onion
whole peppers, lil' bit salt and msg (opional)

Combine all ingredients and Chicken into pot.
Boil till liquid comes thick.

Enjoy.

Once again: Play around with dee Recipe to make it your own!:)

scrivener
July 30th, 2007, 09:01 PM
Oooh. Thanks for the recipe. I actually have a recipe and it's pretty close to yours, but I use a 2 to 1 ratio of vinegar to shoyu (I really, really, really like vinegar), and I've never used paprika. Think I'll try that.

When you say "whole peppers," you mean peppercorns, right?

Oh, also: The first time I watched someone make it, I was having a little...fling. With a Filipino girl from the mainland. She was on exchange at UH-Hilo. She and two of our friends used to come over every Monday night for Monday Night Football and dinner, and we took turns handling the dinner.

Anyway, she told me this: When you get it all simmering, you MUST leave it alone. Don't stir, don't bang the pot with something, don't move the ingredients at all, or else the whole thing will be spoiled. She couldn't explain it, except to say that that's what her mom always said. I demanded some kind of reason, so she said something about agitating the chemicals before they were done doing their thing (which is something we all learned in chemistry classes during certain labs).

Have you ever heard this, about stirring RUINING the adobo?

I understand about leaving stuff alone on the grill or in a pan-fry, but we're talking about something that's stewing, something immersed in its cooking liquid. It just doesn't make sense to me that upsetting the ingredients can actually RUIN the food.

Leo Lakio
July 31st, 2007, 07:54 PM
If there are sugars in the sauce, at certain temperatures, the slightest movement can cause new crystalline structures to form, then clump and ruin it. Moisture can have the same effect, so sometimes movement will cause condensation to drop into the substance containing the sugars.

Don't know if that applies to Lynn's (or your friend's) adobo, however.

Shirley Corriher's book, "Cookwise" is a fascinating combination of recipes alongside scientific explanations of why foods and ingredients behave the way they do. I think you'd enjoy it, Scrivener.

I have to admit that I can totally see the appeal. The textures are very pleasing. It's the flavor I'm not sure about; I did eat the entire order ($1.50), complementing it with a Coca-Cola Classic (which seemed like the only appropriate thing to have with this), but while I can't say I hated it, I'm don't think I can say I liked it. lunch was harm ha roast pork (eric's choice) and eggplant and tofu in slightly spicy garlic sauce (my choice) from au's garden behind new diner's on king. we like going there cause they're cheap ($13.88 for the entire bill), quick (we got in and out within an hour), and courteous. plus the food quality is consistently good for the price no matter what we order--ginger chicken, pork bittermelon, beef ong choy (with or without harm ha), minute chicken, oyster chicken, egg fu yong--it's all been good. oh! their gau gee is perfectly executed.

What is a popcorn chicken shaker? The mind boggles.

The chicken pieces are around the size of the McDonald's Chicken McNuggets, I can't remember on the number of them, at least 7 pieces, placed in a cup 6 inches high, pour in a sauce (BBQ was yesterday, Buffalo was last week), close the cup with the provided cover and shake the cup for a while (20 seconds seems to work).

The chicken pieces should be coated with the sauce, eat them with the fork provided (and carefully not to eat an entire piece in one bite).

It's kind of new thing for Arby's maybe being advertised at least in the last 3 to 4 weeks.

The people behind he counter in their chef outfits and vegetable-print toques, were very pleasant and accommodating. They'd put ANYTHING in a bowl for you. But then they offer to turn it into a chopped salad if you like. CHOP CHOP CHOP CHOP the decibles were deafening! Tell me if I'm wrong. My salad was huge and satisfying. Not THAT cheap, but healthy. I'd recommend it every once in a while. As I was leaving there was quite a line. If you eat there, your salad is served in the big stainless steel bowl it was made in. Interesting concept!

eric and i went to the okinawan festival for our lunch, too. we shared an oki dog and a pig's feet soup. (http://starbulletin.com/2001/06/13/features/request.html) was soooo good! and for dessert, we rushed to the express line for andagi (http://starbulletin.com/2005/08/31/features/story1.html) (3 andagi or fewer). to eric's combined amazement and horror, i gobbled my fresh and only a tiny bit greasy andagi and a half before eric got through with the first two bites. of course, he grew up eating really good homemade andagi; his grandma's banana flavored version (which i had the honor of trying earlier this week) is the best in the universe. so the ones from the festival were just "meh" to eric, but heavenly for me.

oh, almost forgot--we shared a mango flavored calpico (http://www.calpico.com/ready_to_drink/index.html), too.

Yesterday, for lunch we shared an Oki-dog (hot dog, chili, Okinawan Shoyu pork, lettuce, all wrapped in a nice warm flour tortilla) at the Okinawan Festival and then some Huli -Huli Chicken and then a few andagis. I have to say that i was dissapointed with the oki-dog which i remembered as being really yummy. The okinawan shoyu pork in the oki-dog was so manini (almost non-existant) and not flavorful, like usual- and it was drenched in a cornstarch thickened gloop. And they also ran out of lettuce to put inside :(

Luckily, the andagi saved the day. Same for us with the andagi express line.

shoots - wish I would have known you would be around. I could have come down to say hello.

that's really sweet of you! going to 3 star was spur of the moment that day. we had intended to have breakfast at grand cafe but got downtown closer to lunchtime. we were in downtown only because i needed to buy my books for the new semester.

back OT, i've had some good lunches this week! tuesday's lunch was fresh corned beef cabbage, from the caf at work. wednesday's lunch...i can't remember. thursday's lunch was a strip steak and steamed cauliflower, yellow squash, and braw-caw-lay-hey (can't help but sing that dana carvey song in my head). and yesterday's lunch was leftover risotto that i made the night before (see what's for dinner thread).

today's lunch was actually a very yummy brunch. eric cooked some turkey bacon and made a scramble of jalapeno, mushroom, onion and colby jack cheese. we ate that along with whole wheat toast topped with organic, freshly made peanut butter from down to earth and some organic mixed berry preserves. yum! i was hungry (i had funny tummy last night and ate a small dinner) so i completely devoured my food before eric was even halfway done with his plate. of course, he had more food on than i. still--i rarely gobble my meal down like that, especially when jalapenos are involved. what can i say? eric's great in the kitchen! :D

Jalapeno bagel with black bean hummus. I'm soooo irked: Someone removed my hummus container from the Executive Chef bag it was in, on a shelf in the faculty fridge. I liked that bag.
Inspired by scrivener's love of the bagel, I made a turkey with mayo and dried cranberry sandwich on a sesame bagel. Quite delicious!

Yep! There are a whole lotta rule breakers! When I typed "protein" in the post above I heard the voice of my 4th grade teacher, Miss Wommack, reading at the pace she was writing the rule on the blackboard..."Remember class...i before e except after c."! That was 54 years ago for cryin' out loud!

To get back on topic...I also had a caffeine free diet coke with my lunch smoothie! Really!

Breakfast for lunch. Stopped in at our favorite breakfast place (Voula's - recently featured on Food Network's "Diners, Drive-Ins & Dives"), had biscuits & gravy, bacon, and a Coke.

I was treating myself, as I just plunked down the first tuition payment towards a certificate program in Audio Production through the University of Washington. October through May - time to get my studio skills back up to speed, after a decade away from recording facilities.

Mini loco-moco, mini meatballs w/gravy, regular loco-moco, fried chicken dipped in Korean sauce ... all from KJ's Local Grindz at WWCity SC.

OK, I didn't eat all that by myself. My plate was the (typically glorious) fried chix dipped in Korean sauce. I was AMAZED that despite being dipped in sauce, it was still crunchy when I got it home to eat it!

Sauce was really good and not spicy. Despite my earlier love for hot and spicy food, it now makes me fearful. Stupid reflux.

I don't drive into Kaneohe often, and the last time there, I actually contemplated KJ's over Masa & Joyce, but opted for the latter.

OK, so if I'm a newcomer at KJ's, what would your recommend as their "defining plate"? What kinds of fried chicken varieties are there? Describe the (secret) batter. What's so great about it?

Watching this KHNL "Cheap Eats" video (http://www.khnl.com/Global/category.asp?C=63631), it shows they have a 6-piece fried chicken plate for just $6. Wow, six pieces! I don't think I could finish two! That's a bargain in itself, let alone you could still split that with 2 or 3 people.
