Excess eggplants from the garden prompted a massive grilling session. I threw some boneless skinless chicken on the grill; and sliced a giant onion into four big rounds. Grilled it all. Then decided to grill tortillas filled with cheddar for the kids and goat cheese for the adults. Then we filled them with the eggplant, chicken and onions. Wow. I'm so glad I got hubby the grill for Father's Day a few years ago! Followed it off with a Super Easy Peach Cobbler: A jar of sliced peaches with juice, about a cup of craisins topped off with white cake mix, dotted with butter and baked at 350 for 45 minutes. Served ala mode. Ooee, gooey yummies for our tummies!

Sesame, artificial crab Poke, Salmon Poke, whole wheat crackers and fresh brewed, berry flavored ceylon teas. Later, dessert will be Boston creme Pie from the bakery, to be enjoyed when company arrives. Oh yeah, and more tea is on tap. :p

I've never seen Italian Sausage put in WHOLE in the pot with the sauce. But I bet it's good! Just pour da' whole buggah, sausage and all, right on the spaghetti noodles. Yesa!
On occasion, I've taken the ground, seasoned pork out of the casings and incorporated it into the sauce, which is a great substitute to plain 'ole ground beef.
For Italian Sausage, we usually sauté them in Extra Virgin Olive Oil with garlic and slices of fresh small sweet red, yellow and orange peppers (Costco). After the sausage is cooked through, then I'll slice them up and return to pan, then finish with fresh Basil. Great as an accompaniment to any pasta dish, or combined as a pasta dish in itself.
Assagio serves this dish for about $15. You can make it at home for a fraction of that, with enough to serve the entire family.

Shepard's Pie. Layer of Hamburger, onions and odda ingredients. Layer of kernal corn. Layer of fresh mushrooms. Layer of mashed potato topped with cheddar cheese. Bake foa five minutes at 300 degrees. Cook gravy from drippings and pour over individual servings.

Put the Roast in the Pot.
Fry in oil on both sides with the following spices:
salt, pepper, garlic powder, msg (optional)
ginger and garlic
till brown.
Add water to cover meat and little bit ova. Use your judgment.
Wat? I dunno how to make recipes! Das why dis is Auntie Pupule's Pot roast!
HAHAHAHAHAHAH
Add the following vegetables. No forget cut um.
Carrots, celery, onions and bell pepper.
Boil foa two hours or when meat is tender.
Den add Potato
Important: Add 1 cube chicken broth.
And no forget the metal spoon!!!
Serve over Egg noodles with da gravy thicken with corn starch.

Lookin' Good, Auntie!
Tonight we are having grilled chicken, marinated in Olive oil, chardonnay, garlic, fresh parsley and a little bit of honey. Seasoned with s+p, fresh lemon thyme. A grilled corn salad with pear tomatoes and candied red onions, and some flatbread. Small salad on the side.

Nice weather seems to be paying a long-term visit to the PNW, so we grilled chicken skewers (marinated in pineapple-starfruit juice w/shoyu) and beef strips (with chili and garlic) along with onions; the beef and onions for later in the week. Also, Trader Joe's makes a good roasted potato salad (w/scallions, cheddar cheese & sour cream), so we heated some of that up.

A 12-oz. prime sirloin, broccoli, salad bar, baked potato, and iced tea with lemon. Ruby Tuesday's at Windward Mall. Total bill was $31. Excellent service, adequate food (loved the salad bar the best), no wait for a table at 5:30pm.
Only thing was, I went there because I'd been given a gift card to Ruby Tuesday's. Didn't find out until the meal was done that their gift card machine was broken. Good thing I had the credit cards with me.

It was homemade beef, broccoli, rice and lumpia, some lumpia baked and some fried. Surprisingly, the baked wasn't bad.
Dessert was strawberry/blackberry shortcake, pretty good to burp.

I made bread in the bread machine...granary flour, white flour, yeast, salt, milk, two scoops sugar, two eggs, wheat bran, and two big scoops butter. I got carried away and so there was too much dough, so I took half of it out to make pizza. Pizza with sauerkraut and hotdogs and pizza sauce and cheese...YUM!

last night's dinner was eric's first attempt at shoyu pork in the pressure cooker. wow, it was sooooo yummy in its tender, porky goodness. i was happy to eat a hunk of that with brown rice and some sliced tomatoes.
tonight's dinner was alarge thin crust, extra sauce pepperoni pizza with jalapenos on the side from papa john's bought for less than $2.00 because of a coupon for one free large one topping pizza (we got charged for the jalapenos). instead of the spice mix that papa john's provides, we used the following spices/herbs from his pantry: basil, oregano, red pepper, garlic powder.
i much preferred sunday's dinner.

Fresh Alaskan sockeye salmon fillet, steamed with ginger slices and cilantro and mirin, steamed broccoli with some Green Goddess dressing on it and field greens with Ranch dressing. Dessert was a dish of fresh strawberries, Rainier cherries and Dulcinea melon.

Anyway, I had for the 2nd night in a row some take out Chicken with Black Bean Sauce over Cake Noodles from the Golden Duck on King & Piikoi. I like to pour chili sauce over it as well.

last night's dinner was had at au's garden behind diner's in kalihi. they're cheap yet consistently good in the quality of their food. we had the garlic eggplant and the pork ong choy. i forgot to ask them to add harm ha to the ong choy, but eric and i left with very happy tummies regardless.

Dinner was homemade Taco Soup! Oh man, if you haven't had it, google for the recipe and then maybe make some of your own changes.
We found out that the bag of "fifteen beans" works great in it, then use ground sausage and hamburger, black olives, a bit of jalapeno if you like it and can take it, fresh tomatoes chopped if you have time, and a lot of them, either frozen sweet corn or chop your own off the cob for fantastic flavor, mushrooms, man found out they are packed with potassium.
We use several packs of the taco seasoning mix and the powdered Ranch dressing mix, and cheese! gotta have some cheese, for us the sharper cheddar the better.
sometimes we pour this soup, very thick and not so soupy soup....:D ...over salsa chips, and sometimes over a raw salad mix. It's versatile, heavenly with cornbread or just alone with your fav. cracker. It's very filling and man, I even had it for breakfast before and I was energetic and moving for hours.
Okay, I just lust the stuff....burp~

Okay, you're going to mock me for this (and I deserve it), but Wendy's new BACONATOR (really, it's a title that should always be in all caps) is soooooo wrong it's just about right. Two patties. Okay, you're going to mock me for this (and I deserve it), but Wendy's new BACONATOR (really, it's a title that should always be in all caps) is soooooo wrong it's just about right. Two patties. No sauce? Oh man that just killed it for me. I needs me some sauce. I'll stay with my sin that is the Bacon Ultimate Cheeseburger (Jack in the Box) that I have once every 4-8 weeks. I try to convince myself that since I have a fruit cup instead of fries with it and an iced tea or bottled water that it's somehow more healthy. :D

You would think, but as much as I really, really like the fried chicken there, I just about never order it when I eat out. I don't like finger-food when I'm eating out. I'm doing a lot of reading for my thesis right now, especially when I eat. So, you know. I need to eat stuff I can eat with just a fork or chopsticks in one hand. No two-handed food and no knife-and-fork food.

some nice touches--when i made the reservation, i told them it was his bday. when eric opened up his menu, it had been personalized with a happy birthday greeting which the staff all signed. also, the plate of dessert had a single lit candle and "happy birthday eric!" (okay-it didn't say eric, it said his real name) written in chocolate syrup.
the food descriptions, which i copied off the restaurant website, do not do any part of the meal justice. and i wish they had a listing of the wines served available, but they don't.
eric and i have eaten at a lot of fine dining restaurants over the years. we've decided that last night's dinner, with it's perfectly paired wines (well, champagne and wine, cause the app came with a champagne), made for the absolutely best meal of its kind in this state. the only other better meal we had was at thomas keller's bouchon in vegas.

Tonight I'm cooking a Peruvian chicken dish called "Pollo a la Brasa". It's got shoyu, lime juice, oregano, cumin, lotsa garlic and some paprika in the marinade. The recipe came from the Sept. issue of "Gourmet" magazine. This issue is a keeper because it's got all kinds of Latin American dishes in it that I want to try out.

Preserved Lemons with chicken, cilantro, tumeric, garlic & onions cooking in the tagine as I write. Couscous with green olives and raisins will be served along with roasted cauliflower and carrots. A big Nalo Greens salad with Big Wave tomatoes will round out the meal!

Heh. I was thinking about starting a Bombay thread! But since you metioned it...
Since it's location is waaaay too convenient, I tried it a couple of weeks ago with out of town friends. We all liked it a lot. I went in a bit skeptical as I'd heard mixed reviews. Friends and I were there mid-week and the place was almost full; the majority of patrons being of Indian descent. It may be pricey for Indian food but I don't feel it's pricey for Waikiki. I've not been to Maharani but I've heard good things about it. Still, with Bombay being a short elevator ride away, it'll be hard for me to get in the car and go elsewhere! Can you say...laaaaaaaaaaaazy?!!! :o

An experiment tonight: furikake chicken, but I didn't deep fry it. Just soaked the chicken in some shoyu, mirin and garlic, and then I took the chicken out of the marinade and coated the skin side with honey and then sprinkled furikake on top and baked it. Came out ono and I didn't have to worry about deep frying and all the grease!

We had my mom's birthday dinner at Stuart Anderson's in Waimalu. I was pretty much full by the time my entree (NY steak / potato / asparagus) hit the table. It's sitting right next to me as I type this, teasing and taunting.

If you google "broccoli soup" and "recipe" you'll find quite a few. I haven't tried them all, but I was looking for something non-creamy and non-cheesy. I know, I know. What's the point, right? :) I like cream and I like cheese, but I needed something with neither of either this time.
What I did was adapt one recipe, simmering broccoli and potato slices in beef broth (it's what I had; most recipes called for chicken broth or vegetable broth) with salt, pepper, and an onion that had been sauteed in two tablespoons of butter. When everything was pretty soft, I put it all in the food processor. What I got was simple but tasty, if you like broccoli.

Dinner Sunday - we had a guest staying with us (a name Scrivener would recognize - Canadian musician Stephen Fearing), and as Summer in Seattle attempts to draw to a close, we fired up the grill. Skewered chicken breast meat, marinated in pineapple juice and shoyu; tri-tip steaks, one marinated in a shoyu-garlic teriyaki sauce, one with a barbeque rub; red potatoes in a mustard vinaigrette; wine; lots of conversation (we see Stephen only once about every year or two, but rarely get to catch up on our life stories --- we used to spend a lot more time together in the late 1980s, before his career as a touring musician took off.) Leftovers will be transmogrified into lunches this week.

right after i hit submit on this reply, i'm gonna cook something i rarely make-- creamed tuna. if you're unfamiliar with this cheapy pantry food classic, here's how it goes: saute garlic and onion, add canned, drained tuna (eric's preference is chicken of the sea--you can tell the diff in quality b/w canned tunas, if you're the kind that cares about that stuff). season with dill, pepper or whatever you like. then add cream of mushroom soup and stir til smooth. add milk or water to thin to your preferred consistency; then add veggies of choice. i use frozen carrots/corn/peas/beans or braw-caw-lay-hay (you guys got me singing that song in my head. thanks. :p ). heat through, adjust seasonings, pour over rice or noodles and grind with happiness.
if you've never had this, it sounds like cream-puke, but if you happen to like all the components, this dish is one example where the result is tastier than it sounds.

i made my second try at risotto in the pressure cooker. this time, i made it with chardonnay, mushrooms, spicy italian sausage, fresh basil and italian parsley. the chardonnay (which we sipped through dinner) was Sterling Vintners Collection Chardonnay 2005 (http://www.wine.com/V6/Sterling-Vintners-Collection-Chardonnay-2005/wine/88305/detail.aspx)--eric's pick. we normally prefer reds but eric couldn't resist this one for the price at safeway, where it's normally $20+ but cost $8.00 less today.
if you've never made risotto in a pressure cooker, i suggest you try! it takes only 4 minutes cooking under pressure, and in total, i spent only about 30 minutes preparing dinner. gotta say, i'm kinda proud of myself for this one. gives me hope that someday i might be as good a cook as auntie lynn!

We ventured to Hanazen which is located outside of Walmart- Keeaumoku.
The Kitsune Udon consisted of two pieces of fried tofu which was deep fried. The soup nothing special and green onions added. $5.00
Shrimp Tempura ~ panko and crispy. Also, nothing special. Sauce tasted like watered down shoyu. $1.50
1 Order Gyoza $3.50. Small pieces (6) Tasted good. Same sauce as Tempura.
I wanted mustard or hot sauce but they didn't have any.:confused:
Other Ramen Places I go to, get mustard or some kind of hot sauce. After all, dis is Hawaii!!:)
