Costco DIY spinach salad with Poppy Seed dressing. Comes with generous amounts of fresh spinach, grated mozzarella, grape tomatoes, bacon, red onion, hard-boiled eggs, sliced mushrooms. Added some diced roasted chicken to that.

Homemade pork and beans, hotdogs, and coke.
I finally figured out how to make what reasonable passes for Campbell's beans...can't get em over here....
Soak small beans (I use what's called cocos) overnight and then drain them and fill up canning jars almost halfway full. Bury a small piece of porkbelly in the beans (optional), and fill the jars with a mixture of one part ketchup to three parts water. Seal and pressure can one hour and fifteen minutes at ten pounds pressure.
Different brands of ketchup will give you widely different tastes...I prefer Heinz.

that's a good one. I keep saying I'm going to get a costco membership just so I can get one of those whenever I want.. It's amazing the price compared to a smaller "chef" salad you buy at Safeway..

Just got back from taking Kleo and Sasha to Camilla Yakiniku Buffet!! PK was our cook. It was an experience for them. heheheh Made her try the sashimi, poke, and raw tako. Taught her how to eat rice with meat and miso too. She learns fast and is willing to try. ;)
Next delicacy...chocolate covered meat. :p

:o hi this is sansei and tonight we're having flank steak fryed on our frying pan and we'll have rice and maybe a lettuce salad or something and it'll all be great. last night i had a sunnyside up egg on rice and i had a lettuce salad and my mom had a fried egg with her salad with rice and everything was yum.

I've been making more and more Moroccan stuff lately. Don't know why. Maybe the episodes of "Lost" featuring Tunisia made me hungry for North African grub. And since I don't have a magical portal like Ben does, the best I can do is eat like I'm there.

I was lazy...
So we had boiled tiny potatoes, home-made canned pork and beans, a few slices of bacon that were lurking at the bottom of the freezer, and fried eggs.
And some really good juice from Spain...fruits of the forest...a mixture of strawberry, raspberry, cherry, and red grape juices.

And I'm still feeling rather lazy....
So I mad a quick soup. Fried an onion with a chicken stock cube, a bayleaf, a pinch of thyme, a splash of green Tabasco, a pinch of dried parsley, garlic and chive mixture, and a spoonful of flour, then I added water, a jar of homcanned potatoes and one of cabbage and simmered it all til it looked delicious...I squashed the vegetables a bit with a fork...just before eating it I splashed in the rest of a can of evaporated milk and a spoonful of powdered milk. We had croutons over the top.
There'll be almost enough left for tomorrow's lunch, if I throw in a jar of homemade green soup (anything green, steamed with herbs and pureed and canned).
For dessert, there was cake. I put them into canning jars, too...but they never seem to last, as the kids find where I hide them everytime.
4 eggs
one cup of self-rising flour
1/2 cup of soft spreadable-kind margarine (the kind in a tub, already soft)
1/2 cup of sugar
one teaspoon baking powder
Beat it all for only forty seconds and bake at 350°F til light brown and risen.
You can do this in a small cake pan, or do as I do and bake it in canning jars filled almost halfway full and when just done, cap the jars with lids that have been in almost-boiling water and stick the cakes back into the oven for a few more minutes, then take out and cool and wait for the seals to 'ping'.
(for variety, add vanilla or grated lemonpeel or poppyseeds to the basic batter)

used to be a member of both sam's and costco. only sam's now and their rotisserie chicken is good, too. never had one from costco. don't particularly care for the one from foodland.

went to ISLAND'S FINE BURGERS & DRINKS at ala moana last night, so tonight I ate my leftovers from that - 1/2 "Hawaiian" Burger - (Pineapple, teriyaki sauce, lettuce, tomato, onion, swiss & mayo), and some onion rings.

I agree! And did you notice they have a new lid that is "locked" onto the
bottom half of the container so it doesn't pop off when carrying and taking home in the car? I got one last week and couldn't figure out why I couldn't
just open it and it had that little tab that needs to be clicked apart and pulled to remove the top, brilliant!
The Safeway chickens look awful, the Foodland one is o.k. but the huli huli
seasoning doesn't translate as well if you plan to use it as a base for another profile of flavors.

An opportunity for healing.
Gonna have dinner with a musician friend that I haven't seen in maybe seven years or so. He burned me (mildly) in a record deal gone sour years ago, then moved far away.
I long ago got over the business issue, but we didn't stay in touch. A couple months ago, I contacted him again, and he'll be in town tonight, so we're going to catch up over a big meal.
The AF is a little worried; she's going to join us about a half-hour into dinner, and she's still more bitter about his actions than I am, so she's less interested in seeing him. I'm looking forward to it, though, because I no longer care about what happened back then.

North Shore Cattle Co. andouille sausage fried crisp covered with fresh mango (from glossyp) grilled local oranges & pineapple salsa over brown rice with a side salad of MA'O farms greesn, Kula butter lettuce and tomatoes from Ho farms
with blue cheese and Maui strawberry sauce mixed with balsamic vinegar for the dressing. Really really good! Leftovers for somebody's lunch I'll have the usual V-8 and maybe some watermelon.

Last night I made beef hekka because there was a hekka recipe in The Advertiser. I wanted beef instead of chicken, which the recipe called for. It was the first time I cooked with long rice and dried shiitakes. It turned out quite good. It was also cooked in one pan, so doing the dishes was pretty easy!

sunday night's dinner was $0.99/lb chicken (http://hawaiithreads.com/showpost.php?p=200687&postcount=34), which he roasted with lemon & apple, along with my tabouli salad with fat free feta, fresh thai basil, roma tomato & cucumber, with which we enjoyed sam adam's summer ale. dessert was thai watermelon.
tonight's dinner was leftovers! and a couple of safeway peanut butter cups (2 bags for $6), which are, in our opinion, better than reese's.

lamb chops with a salsa verde and some type of pasta. probably just garlic, olive oil, red pepper flakes and tomatoes. the salsa verde is from giada (spelling). it calls for cilantro, mint, lime zest and juice, olive oil, red pepper flakes, salt and pepper, shallots and capers.
last night it was fajitas (steak and chicken) from cisco's in kailua.

Lamb shanks slow roasted with grilled eggplant, roasted Ho Farms Roma
tomatoes, Souane Farms carrots, Maui onions, red wine, balsamic vinegar
kalamata olives, thyme, oregano & rosemary from the herb garden with some
lemon pepper and fresh lemon juice and zest. Hopefully it will be good just
threw whatever we had in the pot, it smells good that's for sure!:)

Marlin marinated in roasted tangerine juice, garlic, shoyu and black pepper with a little toasted sesame oil. Coated in furikake, sautee'd. A sauce of mayo/said roasted tangerine juice with pulp and lots of chopped cilantro & wasabi over MA'O farms greens & arugula with a couple Big Wave tomato wedges around the plate a truly awesome meal with one nice piece leftover for an encore take to work lunch.:) Whoops - forgot the brown rice too!

I made a special birthday dinner. Shrimp marinated in tangerine juice/mirin/black pepper a bit of toasted sesame oil - haricot vert - sea asparagus, gingered chicken (leftover from Thai pizza the night before), roasted red bell pepper, onion, and spicy Thai tofu (from the Maui booth)
stir fryed over brown rice. All above mentioned produce is from the KCC
Farmer's market. It was delicious!:)

dinner last night was with our friend, sam (eric was not able to come).
first, we had a sunset cocktail in the fire pit at rumfire in the sheraton waikiki (http://rumfirewaikiki.com/drinks_libations.html). i ordered the deconstructed pina colada and he ordered the ginger essence white sangria. we shared the mahi tacos. yummy!
(side note: peete's is located across from rumfire, for those of you who care)
we then walked over to duke's where we shared the wings, nachos, and waffle fries. we drank "top shelf maggies, rocks, salt," (eric, a former bartender, reminded me how to order a margarita succinctly when he and i went to duke's last weekend (http://hawaiithreads.com/showpost.php?p=202966&postcount=380)) and enjoyed the scenery. sam is single and i'm a great wingman. ;)
we didn't finish all our food, and i lamented about not having room in my belly to finish off the last three wings. they're that good.

Dinner from mall of asia, the third largest mall in the world, located just outside the business district in manila:
Pinakbet, sinigang, crispy pata, jackfruit in coconut milk sauce, pork barbecue sticks, and turon (banana lumpia). Maybe it shouldn't surprise me that Filipino food in a Filipino mall food court is better than what you get at most Hawaii Filipino restaurants but when I consider that it cost less than $3 per person for all of it, I am amazed.

I should mention it wasn't a buffet style; rather, order off the menu...anything! I ordered the petite filet and lobster. Melt in the mouth delicious. I had a bite of another guest's scallops, kampachi, roasted beet salad...a mini family style dinner!
Of the 6 dinner guests, 2 celebrate August birthdays. Our table was treated to an entire cake...an unbelievable indulgence that's not on the menu. That was followed by the Bali's traditional chocolate Diamond Head complete with a "lava flow" effect (dry ice) and rimmed in chocolate truffles.
It was an evening of pure, unadulterated, gastronomical sinning! HEAVEN! :D

I have yet to dine at the Bali when the service and food haven't been exemplary. It's my favorite dining experience in Honolulu altho' it's pricey so I, maybe, dine there 3 times a year. It's always reserved for special occasions and usually with visiting mainland friends and family. The restaurant is top notch, imnsho!

That certainly beats my last week's salmon experience. Took it out of the freezer in the morning and placed it in a colander in the sink to defrost with the intention of putting it in the fridge after a couple of hours. Got called to a last minute, unexpected meeting, went to the grocery store while I was out and about, got home and didn't revisit the kitchen 'til after 5p. By then the salmon was room temp for God only knows how long. I'm not a risk taker. The salmon found it's way to the trash chute. :(

Tonight's special @ Spots: low-carb steamed mahi.
One scoop each of mac salad & rice with the steamed mahi under a bed of minced ginger / green onion & over a bed of udon, all soaking in sesame oil and shoyu. The udon was a total surprise.

Last night I started my 2 day process of making Portuguese Bean Soup. I've been craving it.....it will hit the spot tonight with some diamond head soda crackers! :)

I like 'em with good French bread. Most of my friends and relatives like it with rice, but I really think it should be eaten with bread. After all, it is Portuguese, and Portuguese are bread people (that's why we have Sweetbread).

Well, I just emerged from a major cook-a-rama-rellathon in panavision and technicolor!!! I have dinner choices for tonight.
Steelhead trout was on sale at Safeway. I baked it in lemon juice and basil pesto. Roasted some fresh broccoli with olive oil and chopped pecans. The broccoli and trout are now packaged into individual tv-style dinners!
I saw a turkey burger (http://www.oprah.com/recipe/food/recipessandwiches/20080516_tows_turkeyburger) on Oprah a few months ago. She said it was the best she'd ever had...from Trump's chef, iirc. Since ground turkey breast was also on sale at Safeway, I decided to try the recipe. I now have 12 patties ready for the George Foreman Grill!
Decisions! Decisions!
Pheeeeeew...no more cooking 'til 2009! :D
