Last night I ate some kind of white meaty fish my dad caught. Sauteed it with butter, lemon, white wine & capers. :D
Dinner tonite will probably be tuna patties with sweet chili aioli.

well since its Friday, we'll probably grab some plate lunch at L&L tonight and then hit the bookstore. I promised my kid I'd take her to Borders. She's been working so hard on her homework, even tho' she's got a cold... she's a good kid:)

I braised two chicken breasts for the girls and I. Squeezed some fresh lemon juice on top and then topped them with zucchini sticks to wilt. Sauted potatoes to be eaten on the side. The girls ate it UP! Easy, but no leftovers!

Dinner last night with the family was Fresh Corned Beef with Cabbage/Carrots/Celery/Potatoes, Char Siu Chicken, Fried Noodles, and corn on the cob. Oh and Ted's Peach Bavarian Creme Pie. :D
Dinner tonite...Baked Spaghetti.

Celebrating signing a nice new contract, I went to Haleiwa Joe's (Kaneohe one) last night. Filet Mignon with Bernaise sauce, baked potato, and a Mojito. Mmmmmmmmmmmm good!

eric and i ventured to whole foods for the first time. while still at kahala mall, we shared a peanut butter gelato and a large skinny iced latte from the coffee/truffles/gelato bar in whole foods. pretty delicious!
we brought home some duck pate, camembert, ceviche, pickled herring stuffed with cornichons and onion, and a box of ak-mok brand whole wheat sesame crackers. along with some north shore greens we already had in the fridge, we had a light but decadent early dinner that we thoroughly enjoyed. =)

Very nice, Cyn. We haven't been yet. I might go tomorrow.
Tonight I had pasta with a crab tomato sauce, made here at home. I had cleaned all day after running the Nike Fun Run with the family, so I did a lot and accomplished a lot. Used fresh basil, mint and parsley from the garden. It was lovely.
Glad to be telecommuting tomorrow. I expect to be exhausted after doing the dishes. Up at the buttcrackofdawn for my pre-work workout, which will go twice as long since I'm working at home. Perhaps tomorrow will be crabcakes!

Tonight my daughter made dinner since it was her day off. I didn't do a good job of teaching her to cook, so she doesn't know a whole lot. Her specialty is Hamburger (or tuna) Helper. So imaging my surprise when I came home and found her seasoning some steaks she found in our freezer! Not bad! For a quick side dish she made mac & cheese (yes, out of the box), but she threw in some frozen broccoli - pretty good!

:o hi this is sansei and the night before,we had pork cutlet's with rice and a lettuce salad and the night before.we had hamsteak with rice and tonight we had portguese sausage with rice and a lettuce and tomato salad and everything was yum! maybe we may have steak with rice and maybe another lettuce salad and i know it'll all be Yum!

Well, tonight it was just me & DH, so it was grilled catfish fillet, with wild rice and steamed broccoli...it was really good, and actually healthy!! :p
Our son is in the kitchen now--10:30 pm--cooking squid and white rice. Don't ask me how he's cooking the squid--I think he boils it for a bit, then fries it in the skillet with a bit of oil and the rice. It smells good, though!

Our son had basketball practice this evening so I whooped up a batch of some chicken wing adobo, some corn and rice. It hit my comfort zone with the cross hairs right on my opu :D

As I was canning some, anyway...we had Mexican Chicken wings. Shake wings in a bag with taco spice, and then bake til done.
Or bake til halfway done and then can them at 11 pounds pressure for an hour and a half.

We're going out to Lemon Grove for a Mexican dinner at Por Favor and a debate watching party for a Democratic candidate for the city council there, a fine young Quaker pro peace family man. Chili Rellen~os, enchiladas, tacos, guacamole...mmmmmmmmmm.

Broccoli and potato soup.
Fry a chopped onion in a bit of butter of oil along with garlic, celery, hot pepper flakes, and thyme. Add a roughly-cut head of broccoli and a cubed potato, with water to cover. Simmer til tender and then add milk, salt, pepper, and maybe a vegetable stock cube. Blend til almost liquified and then thicken with flour or with instant potato granules, if needed.
Very nice served with a dollop of cream and croutons (just cube bread and fry gently with butter or oil til browned and crisp).

I made some beef stew for the ohana. We enjoyed every bite. There was a lot of aloha put into the pot, including some carrots, yukon potatos, brown onions, green peas, and celery. The chuck roast was a bargain at $1.69 a pound.

Homemade cod fish cakes with organic rice on the side. I love organic rice, it's so full bodied and flavorful. I add a bit of olive oil and seasonings - mmm! Dessert is always a part of dinner. Tonight I'm having pumpkin pie for the fall with a cup of Kona coffee from the beans I ordered from Kona Luna. Seafood and Kona coffee almost makes me feel like I'm in Hawaii myself...

Looking forward to some local grinds tonight at friends house for a potluck. My family is in charge of the kalua pork. There will be some chili rice, spam musubis, mac salad, lomi lomi salmon, chicken teri, and a bunch of other goodies. Oh...can't wait. :D

We had a turkey dinner with some mashers and stuffing and steamed veggies, chicken portobello mushroom with mashers, and chicken strips and fries. DH and I were hungry for Fried Saimin. We needed the vegetables and some ingredients. We went to Leimomi but a huge Grey Truck was blocking our drive way. DH went to look for the owner. He found the owner who said she was coming. We sat in our car and waited. Waited. And den I saw dis Tita approaching with one attitude. :rolleyes:
DH said nuttin.
I didn't have to go out of Leimomi.
One yell and da look on my face she came a running.
No one will ever block my drive way again.
The Fried Saimin was delicious.

eric is feeling phlegmy, headachy and body-achy, so he called in sick...er, emailed in sick (the bunch he works with all think phones are mostly for emailing, lol) to his night job and we headed to on dong on king street just after kaheka for something spicy and soupy. we ordered the hot & spicy chicken, the boiled dumplings, and one of the soupy noodle dishes. i can't remember what it's called (it's in korean) but it's #5 of the items at the top of the first page on the menu. it might have been the sahm suhng champong.
for those of you unfamiliar, on dong is a korean chinese restaurant. i guess the way to describe it is that it's what koreans from korea conceive of as a chinese restaurant. in the same way that most chinese restaurants on the american mainland are different from chinese restaurants in china, which are different from chinese restaurants in hawaii--this is a chinese restaurant, as koreans would have it in korea, but in hawaii. are you confused yet?
it's okay. read here (http://honoluluweekly.com/restaurants/2008/05/on-dong-restaurant/) because that writer 'splains it better. and here, (http://www.yelp.com/biz/on-dong-chinese-restaurant-honolulu) for reviews.
the noodles in #5 are nicely chewy--kinda like udon but with less heft. the broth was spicy but had a sweetness to it. there were shrimps, mushrooms, and what might be sea cucumber, which tasted like a slightly chewier black mushroom. the hot and spicy chicken are lovely fried crispy and tender morsels of fowl (sometimes with skin on) in a garlicy sauce with numerous bits of bird chilies. if you run out of chicken before you eat all the yummy sauce, you'll still have some won bok, mushrooms, and bamboo shoots. trust me, you'll run out of chicken, and you'll lavish your rice with the sauce and all its slightly gooey yumminess. the man doo is among the best, homemade, that i've had (other "best man doo"s are at elim on koreamoku and at yuchun next to pro am golf on kapiolani). their kim chee is definitely authentic, and their takuan is a little more sour than the japanese kind. oh, you also get some raw onion and black hoisin sauce. see the weekly piece i linked to for hints on what to do with that (duh, eat it!) as well as the shoyu and vinegar (duh, dip stuff in it!).
hrm. having trouble getting the pics on here, so will try to post them later.
anyway, you should also try what on dong's best known for--the black bean noodles. honestly, 'tweren't our cup of tea, but then again, we didn't add some hot pepper until we were almost done with dinner. maybe if we'd done that sooner, we'd have liked em better.

As for me, I'm going to try and salvage some of my frozen dinners, now semi-frozen because of the blackout--Bertolli Italian Sausage and Rigatoni. It should be okay. I hope it's okay. The Haagen-Dazs ice cream (really a malt now) should be okay, too.

Went to my local Subway for a sandwich, only to discover that they just started closing at 7pm and I was too late. But there was a Domino's Pizza right next door, with a poster in the window about their new sandwiches. I had the Philly Cheesesteak sandwich, and it was actually pretty tasty.

The story goes about a little girl who lives in Pays Basque. You will know it is just across the bay from where I lived.
One day, her father had to take the sheep and goats to the village for sale and so she was left in the cabin on the mountain.
Snow cut them off and after a few days the little girl was very hungry.
Out of the snow, her fairy God Mother arrived and told her not to worry. The God mother flew to all the regions in those parts. She gathered wild rice, quail eggs chicken and sea food.
Then she prepared a meal just for the little girl 'Para Ella'
Now called Paella.

I never knew that was how paella got it's name. Here's how I make mine..
Soak half a cup each of dehdrated greenbeans, green pepper, onion, peas, mixed seafood (I use a mixture of squid, shrimp, mussels), cod or tilapia (yes, they eat them here), and chicken or turkey chunks in just enough water to cover along with half a canned chorizo, chopped, and some of the oil from the jar, a big spoonful of paella spice (dunno what's in it...probably saffron and tumeric and hot pepper), and garlic. After a time, when the vegetables have begun to soften a little, drain the liquid and make it up to three cups, then mix everything together along with a cup of rice and stick it in the rice cooker and push the button. Eat.
Most of you know that I am forever canning and dehdrating stuff and use it for cooking, and that's where this recipe comes from...but I'm sure that you cold do the same with fresh stuff, just use maybe about a cup of each thing, or three quarters of a cup, instead of the dried stuff.

I was brought up in France for ten years as a baby, then later on went to college in Paris.
I can't say I lived on Oahu but had many 'stays' there of about 3 months a time.

Today for dinner we are going to have confit.
First I went to see one of the local farmers and got a big fat force-fed duck. It was already dead and plucked.
The liver inside the duck is what's the foie gras (fat liver)...it's getting canned with a touch of armagnac and a bayleaf and salt and pepper to be served on brioche toast another day.
The duckbreasts are the maigret...thick slabs of dark red meat with a half-inch layer of fat on one side...panfried til rare and eaten sliced thin and bloody.
The thighs and wings have been made into the confit. I sprinkled them with the local big-grained salt and let them sit for 18 hours and then cooked them gently in their own (copious) fat, then canned them in the same fat. Today they'll get gently reheated til the fat melts and then be served all tang and delicious along with potatoes fried with garlic and parsley (in the duckfat, of course), and overboiled greenbeans.
The bones will end up in tomorrow's soup, of course.

geez! confit, foie gras, and maigret? talk about food envy over here. then again, i was already food envious what with reading about ox tail soup, wasabi crusted prime rib, and steamed mullet.
after picking up eric from his friend's place, where they watched the colts-chargers game, i drove down the way to old saimin house (http://pickledmangohawaii.blogspot.com/2007/09/old-saimin-house.html). we shared the extra large wun tun min, a combo plate of musubi, spam, and two bbq sticks, and ordered an extra bbq stick.
the place was constantly packed the whole time we were there, and we seemed to be the only table where someone didn't know someone else at another table. my guess from the snippets of conversation i heard here and there is that many of the patrons last night came in after church at new hope and were kalihi residents. the place also had quite a few take out orders while we were there. even when we left, there was a couple waiting to take our seats. however, the food being what it is, no one seemed to have to wait very long for a table if there wasn't one readily available.
my childhood favorite saimin stop was palace saimin just across the way fro old saimin, and to this day, i mourn for eric that he never got to try washington saimin, even tho he lived just blocks away for a few years (this was before he met me, of course. his gf at the time wasn't as gastronomically enthused as we are now. then again, she had a history of anorexia, poor girl). i'm not sure which is better --palace or old saimin--mostly because it's been about three years since i last went to palace. regardless, at $18 including tip, we got good, honest, old-school saimin with chewy noodles, a tasty (if slightly salty) broth, a nice slice of perfectly cooked spam (lots of places overcook or undercook) and yummy beef sticks. can't complain. will definitely go there again.

dinner for eric and me was turkey taco salad: ground turkey browned and seasoned with garlic, onions, and my cumin-chili powder-cinnamon-paprika-cayenne pepper spice mix; romaine lettuce, hauula tomato, local avocado, cheddar and havarti cheeses dressed with pace picante sauce. we had garden of eatin's blue corn tortilla chips (http://www.gardenofeatin.com/products/product/1076.php) on the side instead of putting the salad into a taco shell.

I ordered 1 piece Shoyu Chicken, Sweet Sour Pork and Noodles for $5.50. Da Shoyu chicken tasted like it was just boiled in little wata and shoyu, SSP was passable and the noodles was dry and tasteless. :rolleyes:
Well, da good ting about it all is with all da walking and da expensive food around (ha ha ha) I definitely going lose weight! :p
Now no get me wrong. Get some excellent places to go kaukau. In fact, I love Galaxy Restaurant. It's upstairs in the International Mkt. Place. Kuhio side Entrance, next to Mad Dog Bar. Talk about great cuisine at great prices.

Wow! What service! As foa the International Market Place, heheheh I am working there now. I share Love and ALOHA and also make shua everything is secured and safe. The only hard time I get is from the smokers. From Kalakaua to Kuhio the property is Private and a Non-Smoking Area. I've been called everything in the book but I keep SMILING. :D Dey neba see me get mad yet. I have to keep cool and professional at all times. ;) But if somebody hit me den das a different story. Da FAMOUS Whacks Whacks going come out! :p
Food is plentiful at the Court. I can't smell but I can still see all the delicacies.

I have been licking lard all week long...leftover from a huge pork shoulder roast that I did over the holidays. I poked the roast with about four cloves' worth of garlic and then rubbed it with salt and liquid smoke and then drizzled olive oil over it and roasted it it really slowly for about fourteen hours. It was delicious but there was so much of it. In the end, I scraped up all the rest along with the dripping and canned it.
There was just about two jam jars worth of fat and drippings that didn't go anywhere but on the stove for use in cooking (see recipe for tortillas) Everytime I go past I stick my finger into the jar and then lick the delicious, melting, garlic-y fat off.

Cooking from Scratch.
I think I have gone back to my roots ?
Lately I have started to cook from scratch, I’ve thrown out all my oven chips, chicken dippers, and other frozen crap and have started to stock up on herbs and spices. I buy my meat in bulk and freeze it. I’ve spent about £40 on meat in the last two weeks but once you’ve got a well stocked freezer, cupboards full of ingredients you can keep the costs at a minimum. When I go out and do the shopping I only get vegetables, and can manage on £25 a week in shopping. Ok, every couple of months I
have to buy more meat, but it still works out cheaper I get my chicken from the Asda , it’s guaranteed to have been supplied from a local poultry farm and freshly killed. I get my lamb chops and pork steaks from the market and my mince meat and stewing steak from the supermarket.
Anyway, I made a chicken/sweetcorn soup today and it was very tasty, but it made me realise how much we have become used to artificial colourings and flavourings. When you open a tin of Heinz chicken soup it’s all creamy looking and looks good. The soup I made didn’t look anything like what Heinz produce, but I’d say it was better.
People say that they haven’t the time to cook from scratch and it’s far easier to stick some frozen chips and some chicken dippers in the oven for half an hour. I say that’s not true, people still work eight hours a day like they did thirty years ago, so why do you think we no longer have time to prepare a home cooked meal?
I’ve even lost weight since I’ve been cooking from scratch, so what does that tell you?

I had a Combination Udon Special from the corner unit at the International KauKau Court. On the right side of the stage. They also serve fresh Italian style Pizzas. The Soup was good. I told the cook to add kim chee. It had Shrimp Tempura, Katsu, Pork Slices, Fish Cake, and Green Onions. The udon was good. I will go back. :D

followed my friend iarenna's suggestion and went to asahi grill on ward bcs she was ono for their combo shrimp tempura and tonkatsu don (no onions, pls). i had their saba teishoku. honestly, there's better elsewhere, but i was too tired to think where to go and hata's on king was already closed. halfway through our meal, the mayor walks in. he waves at everyone, goes to a few tables, shakes hands, smiles as he and his companion pass our table to sit at the the one right in front of me/directly behind iarenna. not sure, but i think his dinner partner was the first lady and ceo of girl scouts hawaii--japanese or chinese in ethnicity, maybe in her late forties, with mostly pepper with hints of salt, cropped hair that seemed to have a bit of curl.

I am cooking an early dinner for a few friends who have to travel to London to catch a plane, so I won't be having mine untill later.
Today, I cheated. Most of this is bought.
Tiger Prawns.
Crunchy Green (Asda) Salad
Cherry tomatoes
Spring onions
Cellery
Mayo
Garlic.
I prepared the Mayo/Garlic/Lemon dash first (Ailioli) and popped it into the fridge. (:) Not really necessary here in this weather).
I lay the tiger prawns on the top of each bowl after giving them a small sprinkle of fish oil. Then just before serving, a sprig of parsley is added.
Main Course.
Roasted a piece of Brisket/Beef in the George Forman.
Mrs. Beatons roast spuds are in the oven now, together with parsnips and turnip. I will roast those later.
Out of the freezer, I got a bag of mixed veg and added to them some baby corn.
Afters
I went to Greg the bakers and bought a selection of fresh cream cakes. Plus a baguette.
So you will see that I have really cheated on the cooking side here today.:cool:
