tonight's supper menu at my house: Roast beef with gravy (secret ingredient of campbell's golden mushroom soup, a little water and sprinkling of onion soup mix...shhhh and don't tell) , field peas with greenbeans, sticky rice for the gravy and steamed cabbage. Yup, there are enough leftovers for lunch at work tomorrow, if I can keep the teenager out of the rice and gravy. Now for dessert--I found a box of Girl Scout thin mints! :p

As for me, oden (frozen, from Don Quiote) with daikon and Chinese mustard cabbage, and a small bottle of sake. That was my healthy one-day-in-the-week meal. Tomorrow, maybe a plate lunch.

i made a very ugly, but tasty enough whole wheat mac and cheese with turkey taco filling. the original plan was to make the mac and cheese in a pot, the taco meat in the pan, and once both were cooked, combine the two. but i got lazy. i cooked the noodles. i cooked & seasoned the turkey (my own spice mix of chili powder, cumin, oregano & cinnamon). i dumped the noodles into the pan with the turkey, then poured the milk/egg/dry mustard mixture in with the meat/noodles and folded in the shredded cheddar/colby/monterey jack. it all blended into a homogenous lump of gray-brown bleh.

ah well. eric seemed to like it well enough, and while i am dissatisfied, it did taste good...just not as good as it would have had i cooked the dish the way i intended. thank goodness i have friends who are single and don't get much home cooking, cause we have enough for six more healthy servings.

My mom took my family and I out for my birthday to Tsukiji Fish Market & Restaurant at Ala Moana Center, part of the Ho'okipa Terrace. Very nice, much more upscale than feeding troughs like Todai and Makino Chaya. But, ultimately, it's a buffet, so for all the bulk, the quality seemed rather sterile and uninspired. At least the kids ate well... and they ate free, too!

Oh no, I never claimed to be eating "healthy"! I am just eating less. I eat those breakfast bars for breakfast and lunch, then for dinner, i just eat less of whatever it is we're having. I don't do "healthy"

The sandwich did have only 1 piece of bread, instead of two ...

i was a little dissapointed at their desert selections .. i didn't know kids ate free! ooh definite a must do when the in laws come back from vacation.

eric & i went to sunrise restaurant on kapahulu. we had the special miso soup & sushi combo (about $13.00), the pork-goya champuru (about $8.00) and the saba, which also came with a spring salad (about $7.00). what i really wanted was the nakami champuru but ran out already. no matter--the prices are right, and we're always greeted like family, no matter how long it's been since we last were there. besides, it's sweet for me to see how eric's face relaxes into contentment everytime we go. he said it reminds him of his grandaunt's house back in small keed days.

Went to En Fuego Grill & Poke (I think that was the name) in Kapolei tonight. I had 1/2 a garlic chicken sandwich and fries and a Coke.

Friends and I went to New Mui Kwai on Liliha. We had the honey-glazed walnut shrimp (quite good), the garlic eggplant (very good), and the barbecue beef sizzling platter (pretty good).

Not that you'd find me going there. I'm so not into Chinese food (except Manapua kinda' stuff).

P.K. and I went to Genki Sushi Ala Moana! Someone should have warned us!

I'm warning you!

We were seated at our table. I looked at the menu. We ordered Miso Soup. Our waitress told us they ran out and it would take twenty minutes. We said ok. I ordered the Teriyaki Bowl, Dynamite Tempura, Dragon Roll, and Fried Tako pieces. From the conveyor belt, we took Cold Somen Noodles, Tuna Sushi, Shrimp Tempura, Ahi Sushi, Won Ton wrapped around something sweet and flaked with powdered sugar.

K-den. The oil they used was dirty. The shrimp was the worst I've tasted. The Fried Tako was horrors! Our waitress told us they ran outta rice if we wouldn't mind having our Teriyaki with Sushi? We were already "Sushied Out! We wanted plain rice for a change.

The Miso Soup we waited finally came. It tasted like flavored hot wata!

Foa Shame!

The Dynamite Tempura, Dragon Roll and Ahi Sushi were good.

Just a good ribbing at ya! I was craving ice cream after lunch so I went to the little store in the building where HI Biz College used to be and in their freezer were Fat Boy bars in various flavors, Hagen Daaz bars and cups, and TGIF frozen yogurt. I was a good girl. I can't make the wrong choices. I am working way too hard. I keep telling my diet body at work that I wanna be an AFTER instead of a BEFORE!

I'm canning laulaus, today, so that's what we'll be having for dinner. For this batch, I'm cheating a bit..besides using spinach, I'm not wrapping the laulaus up, but simply layering the pork, chicken, and salmon with spinach leaves into the jars, and then canning them.

I admire your confidence! I tried to preserve lemons last year and let's just say I'm lucky I put a good seal on my mason jars. How can you get preserved lemons wrong? Salt, lemon, lemon juice? I have no idea! And yet, I did.

i've got a cold so last night, eric made his first pressure cooker chicken soup using frozen chicken thighs, okinawan sweet potatoes, parsnips, and carrots. it was really good! while i'm not 100% better today, i definitely feel 100% loved. :D

I admire your confidence! I tried to preserve lemons last year and let's just say I'm lucky I put a good seal on my mason jars. How can you get preserved lemons wrong? Salt, lemon, lemon juice? I have no idea! And yet, I did.
Don't fret. I've never tried the lemons, but I have had some really bad failures. The things that work make up for the things that don't.

The last of he chicken soup. I added corn, vermicelli, and potatoes to stretch it.

The kids were sick of it, seeing as we had it for the last three meals...so I told them they were lucky that we didn't live in olden days, when, in order to save fuel, people cooked one big pot of something and finished it before cooking something else. And then I taught them the song about that...pease porridge hot, pease porridge cold, pease porridge in the pot, nine days old.

Grilled meduim rare rib eye streak, baked potatoe with all the trimmings (butter, sour cream, clives and bacon bits. Fresh Island corn on the cob slathered with real sweet cream butter. Tossed salad with Manoa Lettuce, vine riipen tomatoes and japanese cucumber.

And Breyers Rocky Road Ice Cream for dessert. YUM... Now for the cleanup:(

also had mashed potatoes (instead of the french fries that come with it) and coke... And dessert (but that is it the dessert thread)

But I only ate half of the burger and mashed potatoes... :)

Ruby Tuesday at Ala Moana.

We were told the menu was new one week.

Ok...fine. We ordered.

I had the surf and turf
Crab Cake and Steak
One side salad

Crab Cake tasted alright but I've had better and it flaked all ova. It was a mess to eat it.:eek: As for my steak, it was totally burnt to crisp. I ordered medium rare. Our waitress, no where to be found for the longest time. We had to call another waiter for assistance. The Salad BAR was excellent.

Chicken bones from the freezer, cabbage, carrots, onion, potatoes, leek, celery, and garlic. Wheat berries, peppercorns, bay, thyme, and, because the kids thought the soup was dull, stock cubes.

It WAS dull, but it was also hot, nourishing, and economic.

we spent the night at eric's mom's and cooked dinner for her bcs her sciatic nerve was killing her. we picked up some red alae salt ahi poke from tamura's. eric fried up a couple huge tilapia, which he stuffed with miso and green onion. at eric's mom's request, i made chicken adobo with potatoes (chicken livers added), and also an eggplant and tomato salad with patis.

we had intended to buy akule from tamashiro's but they were cleaned out and all the other fish that were left didn't interest us. so we drove over to the kalihi foodland and saw the tilapia. none of us had ever eaten it before last night and i have to say, it was pretty good!

staying at eric's mom's again tonight. her back is feeling better, and she wanted to thank us for dog-sitting, cooking dinner last night as well as lunch today, plus power-washing the driveway (we think some of the mold that's growing on the cement might be part of the shibas' paw problems of late). so mom made us chili, panko-crusted shrimp with a spicy dressing that kinda looked like thosand island dressing but wasn't, and heated up some vegetarian shumai. she also made us a romaine and roma tomato salad which we enjoyed with a goat cheese dressing she made.

gotta love it when mom cooks. :D

I had leftover macaroni that I'd doused with butter, parsley, chives, and garlic. I fried some of it with butter and then added lightly beaten eggs, stirred it around til they were scrambled, and..Voila!..ready to eat!

No dinner served. No lunch, either. Not even any breakfast.

The kids were offered breakfast at the music school, before going out in town to sing carols. Then the ludotec (like a library, but with toys) had a come-and-play day, with more stuff for them to eat. Then there were more cakes and pastries and sausage rolls and coke at the end of the day at the Jardin public.

They're in bed with sore bellies.

Another crap food day.

We spent the entire day baking cookies. And eating cookies. And licking beaters and bowls. Cocolate chip cookies, gingerbread cookies, oatmeal cookies, peanut butter cookies, Nutella cookies, to name but a few.

I did make a lovely taco soup...stewing beef, tomatoes, potatoes, greenbeans, corn, onion, garlic, carrot, pintobeans, celery, green pepper, tacospice, thyme, bay, beef stock cube...but nobody wanted much of it.

Mostly home-made Cheesesteak Pizzas, based on a recipe I found here:

The recipe is seriously lacking in seasonings, so I added a BUNCH of minced garlic, some oregano, basil, crushed red pepper flakes -- I think that's it. Also, the capper, literally and figuratively, was the Sargento mozzarella-provolone blend I was stoked to find while shopping yesterday. My cheese-steak fix REQUIRES "provi" ...

The filling was enough for two store-bought, ready-to-top, 12-inch pizza crusts, which I baked on pizza screens from MidCity Restaurant Supply at Y.Hata. The screens allow the crust-bottoms to be wonderfully crunchy, which they would not necessarily be, were they baked on a regular baking sheet or un-vented pizza pan.

I hope you omnivores enjoy the beef Web site, BTW! I stumbled upon it yesterday and have bookmarked it.

I had the same meat, cheese and shrimp as Helen. I opted for only one wine, no soda but I did indulge in a small piece of homemade macadamia nut pie. Ecstasy!!!

It appears that Helen stayed a bit later than I did!

christmas eve dinner was deep fried turkey, filipino pork bone soup with shanghai cabbage, and rice. additionally, my mom made pancit bihon--eric's favorite, and quite possibly, the best pancit bihon on earth. :p

Last night's dinner and today's lunch soup:

A small jar of home-canned pork belly (I scraped off the lard to use another day), onion, garlic powder, thyme, bayleaf, Tabasco, salt, pepper, more pepper, vegetable stock cubes, pinto beans (cooked and dehydrated, from the prep cupboard), celery, potato, carrot...boil em up and then add curly cabbage chunks. Simmer some more and serve with cornbread.

One cup cornmeal, one cup flour, 1/2 cup sugar, one teaspoon salt, 3 1/2 teaspoons baking powder. Mix. In another bowl, mix a cup of milk and an egg with 1/3 cup oil, then mix that gently into the dry stuff. Bake at 400°f for about half an hour.

Christmas pudding and custard for dessert.

I definitely need to check out Blazin Steaks'. :D

Tonight was oven barbecued pork ribs, marinated in balsamic all day, then covered with my own recipe rub. So tender the bones fell out when I took them out of the pan. Made yam chips brushed with butter and sprinkled with a touch of cinnamon to go with. Plenty of leftovers for tomorrow.

I went to Mini Garden in the 99 Ranch Market food court. Ordered beef tomato with rice. It came without beef! Just tomato, bell pepper, and a tomatoey sauce on rice.

I didn't complain. Whatever. It was fine. But I shoulda just went home and had the pot roast I made earlier today, even though I had it for breakfast and lunch.

dinner tonight was mostly leftovers from new year's eve dinner (cook is credited in parentheses for each dish):

prime rib roast (me), dungeness crab, collard greens with ham hock (eric), potatoes fondantes (me), honey-orange glazed carrots (me), brown rice (mom) and strawberry cheesecake pie (costco), all enjoyed with edna vineyard's 2005 cab sav.

all that food for only the four of us--mom, eric, mom's brother, and me. not that we're complaining, but we'll be eating leftovers until we fly out for home later this week.

*lol* auntie, the day i inspire you to do anything is a great day for me, indeed. if you're curious, the prime rib was rubbed with kosher salt (no mo hawaiian salt in portland), fresh ground pepper, and rosemary. my mom found the recipe for it and the potatoes fondantes (a jacques pepin recipe i had, coincidentally, seen on a rachael ray's holiday feast show) at the oregonian (portland newspaper) here (http://www.oregonlive.com/oregonian/stories/index.ssf?/base/living/1197662123250110.xml&coll=7).

we tried fat greek (http://www.kaimukihawaii.com/businesses/current/3544.html) on waialae across from kaimuki city mill tonight. we shared the mussels (served cold with a light dressing of olive oil, capers, lemon & herbs/spices/aromatics), dolmades (rice & herb stuffed vine leaves). eric ordered the lamb shawerma and i got the lamb souvlaki. both were stuffed into warm pita bread and dressed with tsaziki sauce. plus bottomless soda, the meal came out to $30.00. portions on the apps were more than we expected; portions on entree were, IIRC, slightly smaller than can be had at greek corner at puck's alley. i think prices are within a couple bucks of each other, with fat greek being the more affordable. taste was quite good. it's an order at the counter and they tell you when it's ready place. but the joint is quite classy looking, what with a fountain in the al fresca dining area. in fact, if you check out the link above, you'll see that it looks nothing like it used to when boston pizza was there. despite the lack of a server, the staff and the owner were very friendly and welcoming. we'd definitely go there again.

Last night, AbsolutChaos, Nalu, Cran, DiveDown, and I went to Maharajah Restaurant on South King Street near Hausten Lane. The wait was long for a table but it was worth it. It was my first time to eat Indian Cuisine. I can't smell, however, I can taste and everything tasted onolicious. I can't remember the names.heheheh The homemade bread is HUGE!:D They have their own Luau dish too! It was my favorite...reminded me of Beef Luau! Oh! The BBQ Chicken was baked in their special oven that starts with a T.

I recommend Maharajah Restaurant!

tried brining fowl for the first time ever. used hawaiian salt, fresh ground pepper, rosemary & thyme from the kcc farmer's market in my brine, in which i let chicken thighs swim overnight. then i broiled in eric's convection oven for 20 mins at 500 degrees, brought it down to 400 for another twenty minutes or so. made a side of braised broccoli rabe (also from the famer's market) and served with brown rice and a hunk of salt filone (http://en.puratos.ca/news_events/latest_news/list/filone.aspx) from the monster safeway down the hill, crisped up in the oven and spackled w/butter.

not bad for my first try. :p the skin came out with some crisp and the flesh inside was tender and steamingly moist. but i think next time i'll rinse off the brine or salt the brine a little less.

one thing tho--this little experiment has convinced us brining might be part of the secret behind the chicken at KJ's (http://hawaiithreads.com/showpost.php?p=119349&postcount=36).

mr. scrivener, i should kiss you and buy you a six pack of non-canoe water just for your suggesting KJ's, by the way!

Home-made spaghetti. One thing I just discovered when making your spaghetti sauce. If you added too much tomato or it tastes too tomatoey, just add a packet of brown gravy mix to the sauce and it'll bring out the meat flavor over the tomato.

I made my first attempt at spaghetti sauce from scratch and it came out good after I added the gravy mix. Next time I'll stew the tomatoes before adding them to the sauce. I used cherry tomatoes too so I think that made it too tart.

mmmmmmmmm! sounds scrumptious! i make the furikake salmon, but minus the mayo. try to stay away from that as much as possible. nothing beats REAL MAYO!

so i made beef broccoli last night. not bad. followed a recipe from some chinese internet site. the meat turned out sooooooo tender, but i think it was missing something.

MAMA is not feeling well. Her favorite food is Japanese Cuisine. So I asked my friends on Twitter.com earlier today. Scrivener suggested Ideta. Located in Kalihi by Kapalama Canal. My heart of town.:)

What a delight to go again. The place is clean and the menu ~ so much to choose from. Prices are reasonable to the extreme. There's a sushi bar too. Our waitress, Cathy was friendly.

I wish I could say the same for the Hostess.:rolleyes:

We ordered Pork Tofu, Fried Oysters, Ahi Sashimi and Shrimp Tempura.

last night: whole wheat pasta with a vegetable and chicken sauce. pan fried the chicken in olive oil and garlic. then cut it into bite size pieces. sauted zucchini, onions, and bell peppers. added diced tomatoes and this spaghetti spice mix from sam's club. simmered it for app. 15 min. then topped it with parsely. yum. tonight it's momomo. hope they have the hamachi collar.

last night: whole wheat pasta with a vegetable and chicken sauce. pan fried the chicken in olive oil and garlic. then cut it into bite size pieces. sauted zucchini, onions, and bell peppers. added diced tomatoes and this spaghetti spice mix from sam's club. simmered it for app. 15 min. then topped it with parsely. yum. tonight it's momomo. hope they have the hamachi collar.

Next time when you pan fry using olive oil add some basalmic vinegar to really bring out the seared flavor of chicken. Chicken and basalmic vinegar cooked together bring out this incredable marriage of flavor. The result is like your taste buds having an orgasm:eek::D

dinner last night came via a waikiki adventure. eric, our friend sam and i went to rumfire at the sheraton to enjoy the crab cakes with lemon verbena mojito shooter, meyer lemon tarragon aioli, the hoisin bbq sauce & mango chimichurri ribs, tobacco maui onion rings, and mahi tacos with asian guacamole, ginger-mango relish, shaved won bok slaw. we ordered three of their specialties: ginger essence white sangria (YUM!), sunset-tini (good), and the fire tea (boring). it's in the old esprit nightclub site, so it's a great place to bring a date, what with the ocean view & friendly, if not completely smooth, service and atmosphere. we all agreed it's a thirty-something version of the W.

we then went to tsunami's waikiki (http://www.tsunamiswaikiki.com/) on kuhio for guiness (sam & eric). i normally order stoli preses but absolut was on special so i got my pres (http://www.bardrinks.com/drinks/drink.asp?id=fs000470) with absolut instead ( i also prefer ginger ale, not 7up, in my preses). we hoped the pizza guy would be in when we got there but no dice--their one pizza guy wasn't there. bummer--they have the best pizza in waiks. but they were playing a lot of 90s alt-rock so that was fine.

finally, we stumbled out of KON & each grabbed a garlic sauced hot dog from the stand in front of moose's (ah, memories of drunken hot dog eating from back when i used to be a friday regular at moose's!). we ate them while traipsing the makai side of lewers. there was a line of college kids waiting to get into senor frog's (http://www.yelp.com/biz/senor-frogs-honolulu), which we found amusing (we never were the "wait in line to get into a club" kind of peeps). eric thinks the glass structures overhead look like dotted toilet paper. *shrug* of course we miss house of hong (karaoke, derriere-grabbing) and the cellar (great music, steamy dance floor, the dolla bills on the ceiling). but we might check out yard house sometime.

hmm. i guess our dinner last night was half liquid.

anyway, tonight eric and i decided to have another waikiki adventure. we went to rum fire again, this time for sunset cocktails in the "fire pit," an astroturfed outside area with relaxed seating highlighted by...fire pits (video at this link (http://www.youtube.com/watch?v=UZfr_hJPZeY)). because we were just adjacent to the pool area, we were able to enjoy karla akiona's halau's performance, too.

after relishing the deconstructed pina colada (perfect if you're like eric and not a fan of blended drinks), cucumber & lavendar mojito (our server's favorite), ginger essence white sangria (i ordered this two nights ago; eric liked it so much he ordered it for himself last night) and the fire hydrate (for the tastiest "hammered & buzzed" experience i've had), we ambled over to the hyatt. thanks largely to this post in the japanese food thread (http://www.hawaiithreads.com/showpost.php?p=133074&postcount=11), we made reservations at musashi and had the pleasure of enjoying kevin matsuda's performance. totally fun & omigawd, the food was ono--and there was so much of it! pomai pretty much summed up the experience well.

Homemade bread and soup.

Pumpkin and potato soup. Fry an onion and some garlic, add water and stock, cut in a potato or two and a good sized chunk of pumpkin, add a bayleaf and celery. Simmer til tender, then add a few triangle laughing cow cheeses and mix with the wand blender.

It was also very good served cold with croutons for lunch, today.

must have been the "outlaws"?!:eek:Heh - nah, I think it was the chicken dish at the restaurant we went to that night. It wasn't very good going down, and even worse upon its repeat visits. I know it's hard to confirm what causes f.p., but there were a lot of dots to connect to this one meal.

It sucked that we were hours away from home at the time, so I couldn't really rest for quite a while, and couldn't even keep liquids down, so I was worried about dehydration. You know what I wanted more than anything else at the time? Shave ice. Didn't even want any flavor - just that fine, beautiful coolness - "sno-cones" on the Mainland are no comparison.

eric and i picked up a roast pork & ahi poke plate from alicia's market on mokauea st, then drove over to ala moana beach & parked. as we gobbled the juicy roast pork and lovely bits of sea asparagus that commingled enticingly with the ahi and enjoyed the view from the car, we noticed that just twenty feet from us was a film crew. turned out kalai miller (i refuse to put the `okina in his name; he always pronounced it kah-lie, never kuh-luh-ee when we were in high school) was doing something you'd have to pay me money to be interested in. if alicia's food wasn't so damn good, i would have gotten bad indigestion & puked it out as a demonstration of what i think of the self-satisfied, spoiled & arrogant poser.

oh, the roast pork & ahi poke plate comes with a hefty scoop of rice and potato-pea-imitation crab salad, for about nine bucks. enough to feed me and eric quite satisfyingly. alicia's offers roast sirloin, turkey tails, roast chicken and an array of yummy poke. don't let the industrial kalihi neighborhood scare you (it once figured in a scene from "dog the bounty hunter") bcs the staff at the family-owned market/local-style deli are friendly and the food is worth it!

i came home from a long day of work & school, carrying an empty, over-caffeinated belly. i was welcomed by a warm home, fragrant with the scent of eric's cooking.

his creation? a fritata of garlic, shanghai cabbage, jalapenos, and kim chee. it was accented with fresh basil, american parsley, & kalamata olives. we had brown rice & kombu (http://www.kgrocer.com/index.asp?PageAction=VIEWPROD&ProdID=1781) as well as iriko (prepared japanese anchovies) on the side. it went quite well with the 2005 beaulieu vineyard coastal estates cab sav (http://www.garnetwine.com/sku009753.html).

sounds like a mishmash of flavors (i wouldn't have put them together) but it worked! i was delightfully surprised when i followed a bite of the brown rice & kombu with a sip of the cab sav and was rewarded with a sweetness the wine had never displayed before.

dessert was breyer's natural vanilla ice cream along with frozen reese's peanut butter cups. eric, pulling from his experience as a fine dining server, chilled the bowl with iced water before dolloping out the ice cream.

dunno who loves that man more - me or my tummy.

Thai braised chicken thighs, with ginger, lemongrass, soy, fish sauce, cilantro, mint, sesame oil, and red curry paste...marinated overnight, seared off, and covered to let go low and slow. Served with wilted cabbage, peppers, cucumber and bean sprouts and mint scented sticky rice.

I have been canning pink pacific salmon all week (cheap at two euros a kilo, frozen, no head), and tonight I opened a jar to try and mashed it with egg, breadcrmbs, parsley, and chopped onion and then fried it in patties. Made some coleslaw to go with it...cabbage shredded thinly and a leftover jar of sweetcorn, tossed with a vinaigrette and mayonnaise (salt and pepper, french mustard, a lump of sugar, three spoons of oil and one of red wine vinegar, shake with a big glop of mayonnaise)....and homemade fries.

If you want to try canning salmon, I can tell you that it works just fine, and it's delicious straight from the jar. I cut a whole salmon, skin and bones and all, into pieces big enough to fit into pint-sized jars, then added a bit of salt and wiped and set the lids...then canned them at ten pounds pressure for 100 minutes. Counting gas and jarlids and fish, this was about a third of the price of the canned salmon in stores.

I'd canned stewing beef with onion soup mix (fry the chunks, then put them into canning jars and add about half a packet of dry onion soup mix to each jar, top with water, seal, and can at ten pounds pressure for an hour and a quarter)...so I fried a big handful of mushrooms in a blob of butter, added, thyme, dehydrated celery, dehydrated ground sweet bell peppers, a bayleaf, paprika, garlic, a jar of carrots and a can of canned thick cream (Media Crema) to the original can of meat and sauce, simmered it for a bit, and served it over boiled noodles. Mmmm!

on sunday, i tried a twist on this recipe (http://www.foodnetwork.com/food/recipes/recipe/0,1977,FOOD_9936_36075,00.html) called "wild boar" from dinner impossible, but made in a smaller quantity using a bone-in boston butt.

i subbed two jalapenos for the habaneros & used tapatio (http://www.tapatiohotsauce.com/index.aspx) hot sauce. i let the butt cook at 350 degrees for two hours in the convection oven, covered with foil. the pork came out juicy & tender but bcs of the fat cap, i removed the foil, drizzled more tapatio on it, and broiled it for about 20 minutes to get some crisp on.

yum! the first night, we ate it with brown rice and a green salad. we're still eating leftovers every night (there's only two of us and we started with about 5 lbs of meat!). in fact, it was tastier the day after. next time, i'll add even more hot sauce and at least twice as many jalapenos, and roast it without the foil for the most part. it's great in a sandwich!

I found some chicken thighs/drumsticks on sale, so I bought a few kilos...I cut them into chunks and shook them in a bag with Mexican spice mix, then baked them for a short twenty minutes, stuck them into canning jars and whacked them in the pressure canner for an hour and a quarter at ten pounds pressure.

The canned ones will be eaten, hot or cold, in the months to come, the ones that had no room in the canner have been eaten for dinner after having been baked a bit longer. The ones we ate were baked along with some baby Mona Lisa potatoes that I'd canned last year (half an hour, ten pounds pressure), whole, skins and all...and they browned and glistened with the oil and spices from the chicken...YUM!

Along with the chicken and potatoes, there was sweet corn on the cob, found way down at the bottom of the freezer, where it's been since we picked it up from the trucks delivering to the Green Giant corn plant down the road....it goes straight into the freezer from the fields, husks and all, the microwaved like that or husked and tossed into boiling water to cook.

in the meanwhile, tomorrow's dinner is starting in the convection oven. i started a chuck roast seasoned with salt, pepper & garlic powder then encrusted with chili powder, cumin, paprika, oregano, cinnamon & unsweetened cocoa powder. after searing in high heat, i'll bring the temp down, douse it with our last bottle of mac's blackwatch (http://www.macsbeer.com/brews_blackwatch.php) (note for scriv: not as good as black butte's porter (http://www.deschutesbrewery.com/BrewPub/OnTap/5832.aspx)), and continue to cook. i plan to cut it up for cinco de mayo tacos tomorrow night. i might add some dona maria mole sauce (http://www.asiamex.com/proddetail.cfm?CFID=447999&CFTOKEN=683248&ItemID=458&CategoryID=31&SubCatID=97), too--we picked it up on a whim at safeway. anyway, this crust recipe is an experiment based on a chili seasoning recipe of eric's. i'll let you guys know how this goes.

Tonight I made hamburger curry, but added some teriyaki sauce to give the ground beef some punch. My kids loved it so much I think I'll make it weekly. It's cheap and easy and a better way to stretch a pound of hamburger than using hamburger helper.

eric and i shared a turkey bacon/jalapeno/tomato scramble last night, and downed it with sam adam's black lager. mmmmm! beeeeeeer! :D

Last night my wife gave me a break from cooking. She went to our grill and grilled up some massive 2-inch thick boneless pork chops from Safeway using a salt, herbs and a cayenne pepper rub that was to die for. Polished it off with a Smirnoff Iced beer and this satisfied puppy went lights out by 9pm.

My wife sure knows how to love me...thru my tummy.:)

i don't have time to describe it much, but two nights ago, eric and i went to los chaparros (http://www.loschaparros.com/) on beretania.

we started the meal with matching shots of don julio anejo (woo hoo! great way to soothe a canker sore (http://www.mayoclinic.com/health/canker-sore/DS00354) on the back of my throat!). then came the red snapper ceviche. the owners tell you to add as much hot sauce as you like yourself, so you can make it spicy or enjoy it as is (it's tasty w/o the tapatio, but we like it hot). eric ordered the chicken mole, and the sauce was a deep savory cocoa experience. i had the chili verde. the pork was tender and the sauce seasoned quite well with herbs. actually, the seasoning is the thing at LC. refried beans can be bland but theirs is brightened by seasonings like cumin. neither are they fatty. we drank carta blanca whilst eating our entrees. dessert was a flan and a b-52 coffee (italian coffee, grand marnier, kahlua, bailey's).

oh, and then we went to see iron man. so cool have only 20 people in the same theatre as you, and all of them relatively quiet so you can fully enjoy the show. loved the movie!
