Last night's stew. Damn I was so annoyed last night. I had just gotten the thickness of my stew to the perfect consistancy for "Hawaiian Style" stew or a bit on the watery side so it goes deep in that double scoop of rice.
So my wife comes home and while the stew is finalizing it's thickness (with cornstarch) and I'm relaxing in the living room drinking a Bud, my wife adds a quarter cup of flour to the stew!!!!
I come back to the kitchen and see the flour out on the counter and my heart drops. She says it was too watery. I told her I had just added a thickening agent before relaxing...AND SHE ADDED MORE in the form of pasty flour.
So the stew is a pasty thick substance with the consistancy of thin set mortar compound. I imagine for lunch today I'll have to use a knife to cut up the chunks of stew after an overnight refrigeration.:(

i took a hint from sandra lee (http://www.semihomemade.com/sandra-lee/biography.htm) and went semi-homemade:
i sauteed some chopped hot capicolla (http://www.todarobros.com/detail.aspx?ID=106) (procured at the monster safeway) in a pot before dumping in classico's four cheese alfredo sauce (http://www.classico.com/flavors/product_details.aspx?pid=48). once that was heated through, i added some thai basil and american parsley, which i chiffonade-d. i poured that over some whole wheat macaroni, added some fresh ground pepper...and voila--mac & cheese, earned through a little more effort than using the stuff in the blue box, but scads tastier.

I made a Spanish-style omlette.
I fried cubed potatoes in some of the oil from a canned chorizo (I can them in peanut oil...it makes the oil a beautiful red colour, with a delicious taste of chorzo to it), with an added sliced onion and garlic. I then mixed home-dehydrated powdered green peppers with milk and a dozen eggs and poured it over the cooked potatoes, put a lid on the pan and cooked it til just done, then turned the omlette out onto the pan's lid and slipped it back into the pan to finish off the bottom part.
I would have put chorizo into the omlette, but I used it all up in a paella the other day....but there still is plenty of oil to flavour things with.
We had fresh home-made wholegrain bread and butter, milk to drink, and leftover chocolate easter eggs for after.
(canned chorizo: put a chorizo into a canning jar and top it with olive or peanut oil or melted lard. Put on the lid and give it a boiling water bath for three hours or in a pressure canner for an hour and a half at ten pounds pressure.)
(dehydrated peppers: Dice seeded peppers and spread them out to dry in a dehydrator or in a slow oven with the door ajar. Dry til crisp. Store airtight in pieces, or whir in an electric coffee grinder til powdered. Todd or sprinkle into recipes as is, or rehydrate for a time in cold water.)

Bread ingredients:
One cup of bran, one of oatmeal, one of cooked wheatberries (I use cooked and then dehydrated, then soaked wheatberries). A cup and a half of hot water, half a cup of melted butter, two eggs (or two tablespoons of dried egg powder), four heaping tablespoons of powdered milk, a handful of sugarcubes, a teaspoon of salt. A pound of wholegrain flour, a pound of white flour, two packets of instant yeast.
Dump everything into the bread machine and come back in a few hours.

Antonio and I went to Beau's hale and ate Homemade Won Ton (pork hash, shitake mushrooms, bourbon, and odda ingredients), Char Siu, Choi Sum, in a simmering hot broth he boiled foa long time.

Let me suggest a Sheridan Street establishment called Little Seoul Jucci Lucci (946-3800) for amazing fish dishes. Lucci has two chefs working there, brothers, and they do a bang-up job. I think she wanted to expand her business with a lunch service. The photo I include below is the fresh ono plate that comes with the standard sauted garlic and onion gravy, rice, fresh salad, lemon zest slaw and kimchee (sometimes mac salad). All plates are $6.95; fish burgers are $4.95, and they have specials ($7.95) such as da double olive pastele plate, choke garlic shrimp scampi, supa low calories raw potato salad, no wata pickled onion, supa hot hawaiian chili pepa water; wow lau lau plate (5.95).
yeah, those are my kids and that's my paper!

okazu for gullick deli on king street: kombu maki (veggies were a little undercooked), inari sushi, chow fun and eggplant (some pieces were very undercooked). flavors were good minus the texture of the undercooked veggies. they offer quite the variety of okazu fare.

we took eric's mom out for lunch at formaggio grill (http://www.formaggio808.com/fgmenu1.htm) in kailua for mother's day.
we shared the caprese salad (fresh mozarella, vine-ripened red & yellow tomato, basil pesto, 18 year old balsamic vinagrette), soft shell crab (pecan crusted with creole butter sauce), boneless shortribs braised with morels and cab sav, hamburger steak on fried rice (description not on the menu, but basically, it was a 3/4 inch thick patty, cooked med rare per our order, over fried rice with a gorgeous gravy). we drank mimosas and then moved on to a st. francis cab sav (will confirm w/eric later). dessert was a cheesecake with blueberry sauce and two french presses of illy coffee.
eric and i have been to the market city formaggio and find it a better value overall than brasserie du vin; this was the first time at the kailua location for the three of us. the caprese salad is the best i've had in the state, heightened above the rest by the balsamic vinagrette that is syrupy and deeply faceted in its sweetness. the crab was perfectly crusty yet steamily tender on the inside. the shortribs...oh my! you needed only a fork to cut through, and the morels & cab sav bring a homey comfort food to luxury. by the time the hamburger steak was placed before us, i was in such a state of alcoholic and gastronomic bliss that i must apologize since my brain cannot now describe the flavors beyond simple words like: beefy. yummy. ooh! gravy! and rice way better than zippy's quality. the cheesecake was not overly heavy, and the coffee was better than what you can get at starbucks across the street.
our server was also wonderful--informative, friendly, unobtrusively attentive. water & coffee were refilled at exactly the right times. considering the service, ambiance, the quality & portions of what we ordered and the fact we we had two full glasses and two tasters of the wine and two mimosas, we think the approx $175 we paid was reasonable. plus, mom is worth it! :)
if you haven't had the chance to go, i'd highly recommend formaggio grill, as well as its sister wine bar in market city. mom certainly loved it, and it was an option that much better suited us than going to waikiki for a buffet since it's relatively equidistant from where we live and where she lives.

We'll be having rabbit in a cream sauce with walnuts...it's simmering as I speak....
I cut a rabbit into chunks and fried it lightly in a bit of oil, then stuck it in a heavy pot with a cover. I sliced three onions into the remaining fat in the pan and stirred them around til they were browned and stuck them into the pot on top of the rabbit, then swirled a cup of water and scraped the bits off the pan and that went into the pot, too, along with a pinch each of thyme, allspice, garlic powder, and celery salt, a bayleaf, and a heaping spoonful of veal stock powder.
The kids are at this moment cracking walnuts, and in a half hour or so, I'll chop them up finely and add them to the rabbit along with a small can of Nestlés thick cream and serve the dish on a bed of fat noodles.

Home-canned beef patties with onion gravy, mashed potatoes, coleslaw, and sweet carrots.
I took ordinary hamburger patties and formed them into four small patties each, then lightly fried them and put them into canning jars, added a heaping teaspoon of dried onion soup mix to each jar, then topped the jar with water and sealed it. An hour and a half in the pressure canner at ten pounds pressure, and into the cupboard.
To prepare the meal, I spooned off the fat from the jar and put it into a frying pan to heat and mealt, adding a spoonful of flour and stirring it to make a roux, then drained the rest of the liquid from the jar into the roux, stirring all the while, until it thickened into a gravy. I added the patties and let them heat through...voila! Next time I might also add dried and powdered mushrooms, or make the sauce with added evaporated milk or red wine.
Now, about the mashed potatoes....the trick to making fluffy, non-gluey ones is this:
Peel, cube and boil potatoes until just tender...too little and they won't absorb enough milk, too much and they'll have absorbed too much cooking water....meanwhile, heat milk, butter, salt, pepper and nutmeg (optional) to almost boiling....be careful to watch the milk so that it doesn't begin to boil and escape the pot by boiling over...drain the cooked potatoes and mash or rice or puree them, I use a German noodle machine that squezes them out, or a smashing tool, but a fork will work....then add the almost-boiling milk mixture and fold in gently and spareingly...too much beating (NEVER use a mixter!), and you end up with a gluey mess....the trick is in the hot milk, use just enough and not too much.

An omlette made by frying potatoes and onions in the delicious oil from my home canned chorizos, them mixing eggs with dehydrated and ground green pepper and garlic and pouring that over the spuds, covering, inverting, cooking the undesideand serving. With baked beans and homemade bread, milk to drink and to wash down the codliver oil capsule with.

Macaroni and cheese with hotdogs made from leftover cooked macaroni and a white sauce made by melting a nut of butter in a pan with a small chopped onion, a blob of mustard, salt and pepper, and then adding a spoonful of flour...stir the mixand cook it a bit and then slowly add milk (or in my case, water and a bit of canned milk and dry milk powder), and simmer til thickened...then add a handful of parmesan cheese and a handful of grated swiss that I found lurking in the freezer....pout this sauce over the pasta and top with a sprinkle of melted butter mixed with breadcrumbs. I stuck the frozen hotdogs on the top and popped the casserole into the oven for about half an hour or so.
We had a tomato, onion, and corn salad with vinaigrette to go with it...small blob of mustard, salt and pepper, a lump of suger, drop of shoyu, three tablespoons of oil and one of red wine vinegar.

Yesterday we went to Pepper's Place in front of Sports Authority at Ward. My dad had the philly cheesesteak, my mom had the pastrami and I had the meatball sub. My parents let me have small pieces to taste, it was all sooooo good and it smells great while they're cooking it. And my meatball sub was great but a little messy by nature. Took a visiting friend for a drive up the windward coast today, and stopped for lunch at Crouching Lion Inn, which officially re-opened for business last Saturday (after a soft opening one week earlier). The place looks great now, and the food was delicious and fairly priced. Dinner menu looked pretty good too. Their website doesn't seem to be up yet, but hopefully the menus will be on it when it is.

Yesterday I had a Chicago dog with the works (except onion) a bag of Maui chips and water from the new location of Hank's Haute Dogs in Waikiki. We went to the blessing and soft opening in the morning, I took two friends who are visiting from Concord, CA and they had the best time! Then we went over to Roy's and sat at the bar and had a glass of Sauvignon Blanc (me) and a bowl of their spiced edamame as snack. It was a great and not typical afternoon nor typical lunch! Today it will be a bowl of mango (from glossyp's tree) with blueberries and strawberries with some chiffonade of basil on top. BTW - the new Hank's is in the International Marketplace toward the back near that waterfall that people were waiting in line to have their picture taken in front of.

I was a little worried that I would get it all wrong when I was trying to make it last night. This is the first time I've tried to make anything with taro. My Mom calls it dasheen.
Anyway, it came out soooo good!! Me & my Sven couldn't stop going back for seconds, then thirds, then "just a little more", then we HAD to put the rest in the refrigerator! I just cubed the taro and added it to a family recipe in place of the potato. I really can't get over how good it was! Yay! :)

L&L "Healthy chicken plate," which has brown rice, kidney beans one chicken thigh, cuke slices, a tomato slice and iceberg lettuce, comes with a pack of Ranch dressing. My review: DON'T BOTHER. I do a way better job of chicken on salad at home. The only thing I regret is the $7 slimming of my wallet. Add Pringles and Cakesters and the lunch was a disaster, LOL.

I had lunch at Big City Diner - Ward today. I had their "Big City Club" Sandwich with Fries & a Diet Coke. Co-worker had Grandmas Kim Chee Fried Rice with Eggs over easy.
I was dissapointed with my sandwich, the bread was wayyy to thick so it was hard to get my mouth all the way around it. And the avocado slice was cut way to thick and it was a short nubby piece. :( I shoulda got my regular (Paniolo Chicken salad). :(

Went to Home Depot to buy tiles to re-do my floor (16x16 tiles at 77 cents each!), then to Bob's Big Boy for a Big Boy hamburger with avocado and an iced tea with lemon and it was all yum!

A bowl of sliced fresh figs and pear with chevre and honey, a slice of rye bread, a cup of chilled acorn squash and mango soup. I'm on a portion control diet. And I actually didn't fall asleep here at work today, LOL!

Subway footlong Big Philly with provolone, red onions, bell peppers, sweet pickled peppers, black olives and tomatoes. Ketchup at the office. Nearly a Philly experience. Diet Coke. Cranberry Almond Silky Smooth Dark Chocolate Dove Bar.

I was supposed to have a business luncheon (Chinese restaurant) but due to some miscommunication, unbeknownst to me, it was cancelled. After waiting and being unable to contact my associates, I headed over to the take out section and ordered a baked char siu bao, 1 pepeao, and 2 pork hash. Washed down with a diet coke.

I might not have spelled it right. Its a little dumpling, like shumai, filled with shrimp, water chestnuts, and other stuff. I think some people call it an 'ear'.

Lunch was actually a late breakfast of a cheese & mushroom omelet and a short stack at the Hukilau Cafe.
They've got the best and friendliest staff of anyplace I think I've ever eaten. :)
