There's a plastic tub of miso in the back of my fridge.
I can't remember when I put it there.
Miso can't go bad. I mean, it's fermented already.
Right? :D

I cleaned mines last week so it's going to be a while for anything else to grow in there.

I once made soup from a tub of miso paste that was in the reefer for at least 6 months. It tasted o.k. and I never got sick, but you could taste it had "aged" a bit. The flavor was more sharp, less smooth.

When I lived with roommates this is what I found:
Several colored fungus: red, green, white. I think green was on a pork chop.
Tofu that melted the side of the plastic container when I tiped it. It left groves when it slid down the side.
Tomato that imploded as soon as I lifted the plastic grocery bag.
