    Not my thread title, but w'evas...

    Roof Lemons
    1 big glass jar
    As many lemons will fit in the jar)
    1 cup Hawaiian salt
    1 big bag seedless li hing mui
    Wash lemons and the jar. Put lemons in jar. Sprinkle Hawaiian salt over lemons. Dump the bag of li hing mui in the jar too. Put wax paper over the mouth of the jar (because the lid 'will rust). Leave on roof one year. Every week roll the jar around to mix up. Transfer the jar to a dark place for the last month.

    I don't see these filled jars in yards anywhere any more.

    What else is mostly forgotten that was so ono in years past?

    That's 'cuz the jars are on roofs! (Sorry...couldn't resist! )
    And who the heck is going to climb up on the roof once a week to roll those jars?!!!

      Yeah, who ever started the roof thing, maybe because kids or thieves would mess with them if accessible?

        I've heard of people making bagoong in large glass jars on roof tops *g*

        Does anyone know how to make something I think is called awa awa? If I'm right, I think it's salt preserved lemons (also made in jars that are probably sitting on roof tops LOL!)
