  • Re: What's for Dinner - Chapter 4

As it's St. Paddy's day, I have a few Irish friends calling for dinner before they go out for the Green Guiness. It's traditional that they have corned beef hash and cabbage.
Yeah, I know, it's not very exciting and my house stinks of cabbage.

Fish on friday here because its Lent.

            Fish Pie for 3.

            Ingredients

Half a pound of Pollock or Cod
            Three large potatoes
Half a cup of double cream
            Half a cup of milk
            1 clove of garlic
Mild cheddar cheese ( I use about a quarter pound)
            One small onion
One desert spoon of fish oil
Half a cup of white wine
Sprinke of Parsely ( I used the dried stuff at this time of year.)
            1 heaped teaspoon of flour.
            1 cup of bread crumbs.

            Method

Cut the cod into tiny pieces
Do the same with the potatoes (about 1/4 inch cubes)
            Boil in seperate pans.
Then cut the cheese in half. Slice one half very thinly and grate ther rest
As soon as the cod has boiled remove it from the heat and slowly stir in the rest of the ingredients.
The potatoes are then mashed and spread over the top of the cheese pie. The thin slices of cheese placed on top of this with the bread crumbs.
It only takes about 10 mins to cook in the oven. When you see the potatoes on the top are going brown and crispy, then it's done.

Cook's tip ! What is the use of opening that bottle of white wine if you are only going to use a cup ? Let's have the rest with the fish pie.
