What's for Dinner - Chapter 4

    Ill with da Flu.

    So I got 1 pkg. frozen Ham Hocks and put um in da pot.
    Covered with wata, three garlic cloves, three bay leaves,
    tablespoon of whole peppercorns, a pinch of MSG. and boiled
    till the meat came off da bones.

    I added kidney beans and cabbage and boiled sum moa.

    Great Soup when you sick.

    Enjoy.

      I myself had vein surgery today so we're having leftover Italian sausage,
      bell pepper and onions with fresh tomatoes and mozzarella on a frozen pizza crust. Mirrors yesterday's dinner except it was with angel hair and spinach tossed in with it. 'cept today no salad greens.

        Which reminds me...I'm too lazy to go find the "What's for Lunch" Thread.

        Anyhows, dis past Wednesday, I had lunch with James, Fran, Ryan, Dennis and Antonio at Remington College. I ordered Pork Chops Alfredo. Soooo delicious.

          My diet has also been altered because of health reason. This past Sunday, I had a late night pizza (a very crusty pizza--just the way I like it), but it seemed to have bruised the back of my throat. Anyway, throughout the week, it just got worse and worse, and by Thursday, I could hardly swallow. It might have become infected.

          So now I’m reduced to eating soups and soft things. No hard, crusty foods, or excessively chewy foods. Tonight, I’m having Okinawan Soba, with lots of vegetables and a little bit of char siu (don’t worry, I’ll chew it throughly, and swallow carefully). Tomorrow, I’ll probably have some kind of Korean soup.

          Who knew that pizza could be so dangerous!

              Thanks Auntie. Actually, when I first realized that I would have to restrict my diet mostly to soup, Chook (or Jook as I spell it) was my first thought. I love Jook, but I don't know how to make it or where to get it anymore. Maybe I'll try Pomai's recipe. Thanks for the link and thought.

                Grilled flap steak, half a baked yam and fresh fruit salad. Oh...and a glass of wine! It was all yum!

                  finances are low so had to make do with what's in my kitchen right now. Opened an individual serving size pack of Salmon, added some lemon pepper, salt & Herbes de Provence and some mayo. Toasted an english muffin, added a little butter & made open faced sandwiches. It was very Yum! and opened a bottle of Cabernet Sauvignon from Argentina, which was also quite nice.

                      Liver Bacon ‘n Onions
                      For 3 people
                      Ingredients

                      ¾ pounds of lambs liver
                      3 rashers of bacon
                      2 large onions
                      2 large potatoes
                      1 oxo cube
                      2 spoons of gravy granules.
                      1 tin of peas


                      Method

                      Chop the potatoes, liver and onions into small pieces. Whilst the potatoes are put on to boil, fry the bacon. When the bacon is becoming crisp add the liver and cook.
                      Put the onions in a pyrex jug and then the oxo cube and gravy granules. Top up with boiling water. The peas I put into a micro dish. The onion gravy and peas are put into the micro together.
                      Mash the potatoes with a nob of butter and a small drop of milk.
                      Switch the micro on for 1 and a half mins while you are putting the liver bacon and mash onto plates. Add the peas and onion gravy ,, then serve.

                              A pleasant dinner with a visiting friend whom I had not seen or had contact with in about thirty years. I had tortilla soup, she had chicken.
