    Baked coconut French toast

    16 1" slices diagonally cut French bread baguette
    1 1/4 c light coconut milk
    1 1/4 c egg substitute
    1/2 c sugar
    1 t ground cinnamon
    1 T vanilla extract
    1/2 c flaked sweetened coconut

    Arrange bread in a single layer in a baking dish coated with cooking spray. Combine coconut milk, egg, sugar, vanilla, cinnamon, stir with whisk, pour evenly over bread. Turn bread over to fully coat. Cover/refrigerate overnight. Preheat oven to 350°. Remove bread mixture from refrigerator, sprinkle pieces with coconut. Let stand at room temp. 15 min. Bake uncovered 350º 30 min. til coconut is golden.
