remove fish sticks from box. fry in pan until golden brown. serve with lemon wedge and tartar sauce =)

Mahi Mahi-
Lightly seasoned, pan seared, served with green apple and jicima salsa.

Pan seared, deglaze with dark rum, add crushed ginger, sliced banana, cilantro, and finish with butter.

Grilled, topped with jumbo lump crab, finished with smoked Gouda cream sauce.

Tuna(Ahi)-
Lightly rubbed with Jamaican Jerk seasoning, grill/blackened till rare(MedRare at most) serve with red onion marmalade.

Butterfly fillet, stuff with blanched veggies, I like peppers, enoki mushrooms, carrots, and green onion, roll up, wrap in nori, dredge in tempura and deep fry till medium rare. When you slice into it, the colors are great. serve with Horseradish Orange sauce.

Coriander crusted, grilled, served with citrus infused cous cous, and sweet pineapple relish, candied cilantro.

Salmon-
Grilled on cedar plank, good glass of wine.

Pan seared and finished with maple ginger glaze with fresh blood oranges.

Salmon--grilled with either a pesto mayo or wasabi mayo.

Salmon--baked in foil with lemon slices, butter, round onion and vermouth and cilantro

Ahi--grilled, with wasabi/shoyu mayo or mango salsa

Petrale sole--sauteed in butter and white wine

Halibut---en papillote, with cilantro, shiitakes and black bean with garlic sauce (and a touch of mirin)
