    Freshly roasted local roma tomatoes, whole wheat penne, sauteed chicken breast with our herbs over local baby arugula & watercress with shaved
    parmesan. Light and lively!

        I am cooking an early dinner for a few friends who have to travel to London to catch a plane, so I won't be having mine untill later.

        Today, I cheated. Most of this is bought.

        Tiger Prawns.
        Crunchy Green (Asda) Salad
        Cherry tomatoes
        Spring onions
        Cellery
        Mayo
        Garlic.

        I prepared the Mayo/Garlic/Lemon dash first (Ailioli) and popped it into the fridge. ( Not really necessary here in this weather).

        I lay the tiger prawns on the top of each bowl after giving them a small sprinkle of fish oil. Then just before serving, a sprig of parsley is added.

        Main Course.

        Roasted a piece of Brisket/Beef in the George Forman.
        Mrs. Beatons roast spuds are in the oven now, together with parsnips and turnip. I will roast those later.
        Out of the freezer, I got a bag of mixed veg and added to them some baby corn.

        Afters

        I went to Greg the bakers and bought a selection of fresh cream cakes. Plus a baguette.

        So you will see that I have really cheated on the cooking side here today.

              Took some friends to the prime rib & Hawaiian grindz buffet at the Turtle Bay Hilton Resort. Was ONO! (Check out their website here.)
              Beautiful drive up the coast, and while we were there we had the sunset on one side of the hotel and then walked to the other side to see the almost-full moon rising out of the ocean. WooHOO! And then the drive back, with the moonlight shining across the water. Man, it just doesn't get better than that!!!

                  French Onion soup

                  I bought bones at the supermarket...they were in the animal food section of the chill cabinet, but they looked ok to me....

                  I browned them in the oven along with carrot, celery, onion, beef fat, and an entire head of garlic (unwrapped from it's skin) til very brown, and then into the crockpot with a few cloves, thyme, peppercorns, bayleaves, salt and pepper, all covered with water. The bones weren't too meaty so I cheated and threw in a beef stock cube, too (in the end, the taste was almost too strong, I shoulda waited to see before tossing in the stock cube).

                  Then I fried half a dozen onions in fat skimmed from the soup, until they were caramelized and almost burnt, strained all the bones and bits from the soup broth (he animals finally got the bones), added the onions, and let it simmer for a bit.

                  Then I took out the soup plates and into each, I put four slices of dried baguette which I'd rubbed with a raw garlic clove (this eats garlic), and topped the bread with grated Swiss cheese, and poured on the soup.

                  The soup was to have a glass of white wine in it, but I didn't have any, so I went to my neighbor to borrow some and all she had was rosé, which I accepted but wasn't sure about...I lost my nerve at the last minute and drank it, instead.

                    I don't make French Onion Soup like that but I will give it a go.

                    Last time I went to see my doctor for a repeat prescription, I asked her for the largest syringe and needle she had. She was perplexed as I had only gone for my blood pressure tablets.
                    I had to explain that when I bought a chicken or a Capon, I injected a mixture of lemon and garlic under the skin before it was roasted.
                    She looked at me and shook her head but with a wry smile. I got my goods but had to promise to bring some of the food up to her next week.

                    I will post the recipe.

                      On the other hand, dry onion soup mix in packets are really good for use when I can meat...a few spoonfuls put into the jar along with seared meat and then topped with water....then canned at ten pounds pressure for an hour and a quarter....Voila! A meal in a minute.

                      Never thought about syringes for the under-the-skin trick.

                      It took years to convince my Mom to send me a turkey baster, which doesn't exist here in France.

                        We will be having lasagne made in the crockpot. Just layer and go.

                        Start with a beef/tomato sauce, more liquid than usual...fry hamburger, olive oil, onion, garlic, celery, peppers, mushrooms, basil, oregano, leftover spaghetti sauce, a can of tomatoes, and extra water.

                        Make a cheese sauce, again, more liquid than usual...melt butter in a saucepan with a spoonful of mustard, a vegetable stockcube, Tabasco, salt and pepper. When melted, add a halfcup or so of flour and stir it around and cook it a bit, then slowly add milk, stirring all the while. Let it gently simmer, stirring often, then add grated cheese or even Parmesan.

                        Grate some extra cheese.

                        Turn the crockpot to 'high' and smear with a bit of oil, then begin:

                        One layer of tomato sauce, one of RAW lasgne noodles (this is why you want the sauces to be slightly more liquid than usual), one of cheese sauce, one of raw noodles, one of tomato sauce, one of cheese (helps to glue the layer), repeat til you run out of sauces, trying to finish with the cheese sauce. Sprinkle with cheese and go away for about five hours. Come home and eat.

                        Sometimes I use tuna, or add vegetable layers (zucchini, eggplant, spinach).

                              Is a crock pot the same as a slow cooker ? I've got a recipe for *Scouse* and I do that in my slow cooker. Some of you may love to try the meals I make in it.
                              If it's the same thing as Susie says ? Then you just switch it on and there is a meal ready for you.
