    Default The best homemade bread in the entire whole of the world

    Into the bread machine, dump...

    One and a half cups of hot water, an egg-sized lump of butter or margarine (softened or melted), two tablespoons of sugar, a teaspoon of salt, a cup of bran, a packet of ready-mix yeast (mixes directly into the flour), and about three cups of whole wheat flour.

    When the machine begins mixing the dough, gradually add enough flour, spoonful by spoonful, to make a nice dough that is no longer sticky to the touch...then leave the machine to do the wonderful thing and it will present you with the best of loaves.

    If you like, you can also add a cup of oatmeal and a cup of soaked wheatberries to the dough.

    This bread is very good toasted, too...slathered with sweet unsalted butter and topped with good jam or cheese.

    Oops! I forgot....add also five tablespoons of powdered milk to the dough mix.

    Hmmm. So that may be the problem with most published bread machine recipes. Not enough fat and milk. Most call for only 1 T of vegie oil or melted butter and only 2 T powdered milk.

    I've made whole wheat breads, but find I need to add wheat gluten to make the texture more.....soft and chewy.

    I usually use the breadmaker to only knead the dough and do the first rise. I take the dough out and punch it down, form it and place it into a bread pan. Not a loaf pan. Let it rise till it doubles and bake it for about 40 minutes.

    Mmmmm! I love the smell of fresh breadmaker bread in the morning. My wife sets the timer so that its done early in the morning whenever she's in the mood to make some.

    Like DREye sometimes she uses the machine just to make the dough then she rolls the dough out and makes some kind of meat filling, seals it then bakes it. Kinda like an elongated baked manapua.

    I've recently begun using flour (bought in 50 kilo bags) from one of our local bakers...it makes a big difference, although the ordinary store stuff is also good.

    Sometimes I take out the dough after the first rise and play with it....doughnuts, cinnamon rolls, stuff like that.

    Or pinch off bits of dough and roll them out to five-inch circles, then take a marshmallow for each dough circle and dip it into melted butter and then roll it into cinnamon sugar, wrap a circle of dough around it and pinch it well closed at the bottom and dip that into melted butter and roll it into cinnamon sugar and then put it into a muffin cup (pinched-side down), let them rise and bake.....the marshmallow inside the bun melts inside and makes a very sweet hollow bun.

    I've just discovered that this bread is even better and more moist and longer lasting if you add three tablespoons of instant mashed potato flakes to the dough.
