¼ c butter, softened ¾ c light brown sugar, packed 2 eggs, beaten 1 ¾ c flour 2 t baking powder ¼ t baking soda ½ t salt 1 c macadamia nuts, chopped 3/4 c fresh, shredded coconut 1 1/2 to 2 c shredded fresh Hawaiian pineapple with juice
Cream butter and sugar in a mixing bowl. Beat in eggs. In a separate bowl, combine flour, baking powder, soda, and salt. Set aside.
Stir nuts into butter mixture. Stir half the flour mixture into the creamed mixture, then add the pineapple and coconut, and stir well.
Add remaining flour mixture, and beat to a smooth consistency. Turn batter into a greased springform pan, bake in a preheated 350 degree oven for an hour. Test with toothpick.
Makes 12 servings
The cake baked perfectly in one hour, and my oven thermometer is correct at 350 degrees. Be sure you check your oven for accuracy.
You can adjust your fruit or nut quantities up or down by a 1/2 cup, with no problems. This is just the way we like it. This cake is not too sweet; just sweet enough. No need at all for frosting or icing. I will post any other versions, using candied fruits and fresh... We believe that this can be easily made in a greased loaf pan too. My angel food pan worked fine. Please wait until completely cool to cut. We used three different type knives to get this not to crumble.
I hate to report that this cake disappeared in one hour! Gobble gobble, ono delicious!

As I said...look at the recipe. The price reflects the cost of ingredients. If you want to try it, get out the mixing bowls and get to baking one for yourself.
Maybe some finely chopped 'Wacky Backy' cooked into it would start the giggles ?

You are correct, Susie! Needing sun and sand for a perfect day. I live down the road apiece from Surf City USA... yes, Huntington Beach trademarked that name, but the Cailfornia sun is COLD today.... Brrrr, 60 degrees. A few Mai Tais could help warm me up. As the song says, it's 5 o'clock somewhere.
Anyone know a good price per pound on plain macadamia nuts, w/o chocolate coating? They're $6.67 a pound at Costco today. Too cold and lazy to crack open a pound myself. I need to keep my happy cake science project going.

My next venture is going to be replicating a taro sponge cake I had for breakfast... yes, breakfast. It was a lovely poi purple color. A not-too-sweet creamy filling inside. I wonder if I need poi or if cooked taro will do? I'll report any findings here, after I research it, and if anyone else is interested. We have a wonderful chain of Chinese supermarkets here in California called 99 Ranch Market... that's where my child bought us this delicious purple delight.
And if anyone has any other ideas about the taro sponge cake, or good island style yummies, I'm all about the dessert... just ask my butt!
