I think part of the Fuji secret was to chill the pots after cooking and before adding to the mix.

it seems that you aren't boiling the macaroni long enough and that is why they are "clumping" up. Is the macaroni sticky when you drain them? If so boil them a little longer and rinse with cold water like Aunty Lynn suggest.

Ooops... forget everything I said! You have to cool the mac and potatoes before mixing. I just remembered (slaps forehead). My Mom mixes the hot potatoes into everything because she likes it clumpy. That's the way I prefer it too. The hot potatoes soak up the liquid. Sorry about that!

I use Mexican Macaroni not Elbow, drain and cool add next to last to the mix...the mayo comes last. After mixing let it all chill in the fridge for a couple of hours before serving.
At least to myself and those I serve it to doesn't come out dry.

What is Mexican macaroni? Any differences from regular kind? Searching just brings up a bunch of Mexican flavored recipes that include Mexican mac.
