Here is a general list from Mexico.
Restaurant wait staff (about 15%)
barber ($2)
hotel maids ($5 per day)
hotel bell staff ($1 per bag)
gas station attendent (80 to 160 cents)
grocery bagger (20 to 50 cents)
bartender (about 15%)
musicians ($15 to $20 per song for a mariachi band)
valet parking ($2 to $5 per car)
grocery cart attendents ($1 to $2)
furniture delivery ($5, more if extra work)
activity staff ($5)
tour guides ($5 to $10)
all employees (2 week bonus pay at New Year by Federal law, plus an additional 2 weeks paid vacation - minimum)
