        Hmm. Salsa. I'll have to try that. During my starving college student days, we'd sometimes throw in canned tuna or frozen peas, and of course season with Tabasco or something, but hadn't thought of mixing in a tomato-based sauce.

        My wife makes an awesome homemade mac and cheese, and serves it at least once a month. In a pinch, though, we do have the giant Costco bulk pack of blue Kraft boxes and even the semi-instant ready-to-go variety. I think those were the first pseudo-food products our kids were allowed to prepare (i.e. add water and nuke) on their own.

            In the past I put canned chilli after mixing a batch of Macaroni & Cheese and then heating up the mixture. This is more in line of making a one pot meal. Also tried the canned tuna and sometimes a can of spinach goes with the tuna.

              Read somewhere about a Buffalo-bleu cheese version of Mac n' cheese. The reviewer was disappointed because it was neither cheesy nor spicy enough. Bet it would be tasty to make a homemade version instead.

                Had some spicy Mac & Cheese from Queen's Hospital Harkness Cafeteria today. In it had slices of carrots, olives and jalapenos.

                        I eat my Macaroni and Cheez with broccoli in it. Works for me!

                          Yummy Bump!!!


                          My go to, default "mac n cheese meal", is a take on an ole Irish fave. . .


                          White Cheddar sauce( Cream, egg yolk, a pinch of nutmeg, salt and pepper, simmer stirring constantly, finch w/ cheese) Some good smoked ham(cubed), and garden fresh(ok, or some frozen) Green peas, Cavatappi pasta, cooked. toss all to mix well. Put into a ramekin/casserole, top with buttered bread crumbs and brown off in the oven.


                          My 5 Cheese "mac Gratin" also gets good reviews: Basic Bechamel sauce, as above, with fontina, cheddar, gruyere, and gouda. . .ONLY at the end, before browning off, fold in ricotta laced with garlic, fresh chopped parsley, thyme, and black pepper, Cavatappi pasta, crumb top and brown off.



                          POOP!!! I can't find the shot after we got into it, but I assure you, it was a stick to your ribs meal in its self. Creamy, rich, and not known for it's slimming effect.
