    You can always go for a classic Mojito :P

    1/2 of a lime sliced
    12 mint leaves
    1 part Rum (bacardi is just fine)
    3 parts club soda
    1/2 part sugar

    Combine limes, sugar, and mint leaves into a tall glass. If you have a muddler, use it to muddle them together. If not, the flat end of a wisk or some other flat surfe would work too. Add the rum then club soda and mix to dissolve sugar. Garnish with a lime and some extra mint leaves (if you like) and serve!

    Makes a nice, cool, and freshing drink for the hot days ahead!

    I've still got limes!! So I made a test batch of this, Spicy Lime Chicken!! I used hippie chicken instead of chicken, the animal, and it came out AWESOME!! Gonna stir this up for dinner tonight in tacos!

    Its so easy! This is the ingredient list:
    • 3/4 teaspoon salt
    • 1/4 teaspoon black pepper
    • 1/4 teaspoon cayenne pepper
    • 1/8 teaspoon paprika
    • 1/4 teaspoon garlic powder
    • 1/8 teaspoon onion powder
    • 1/4 teaspoon dried thyme
    • 1/4 teaspoon dried parsley
    • 4 boneless, skinless chicken breast halves
    • 2 tablespoons butter
    • 1 tablespoon olive oil
    • 2 teaspoons garlic powder
    • 3 tablespoons lime juice
    Mix dry ingredients and coat chicken. Heat butter and olive oil over medium heat. Saute chicken until golden brown, then sprinkle with garlic powder and lime juice. I also added 1/4 cup of vegetable broth. Cook 5 minutes, stirring often.

    TaDaaa!
    I did a slight variation on the Cabo Lime Pie, and it looks like this!!
    I still have a bunch of limes left!! Margarita time? Thanks for the recipes!

    Ha, sure, if Sven doesn't mind having to scrape me off the ground and pour me back into the apartment!

    The Cabo Lime Pie sounds just like one that my Auntie makes. But I don't have key limes. I'm positive that these are just regular tart limes. Can I still make that recipe? What if I add some sugar, will that work? I have so many limes that I can make both pie and margaritas. I am one lucky girl today!! Hmmm, is there such a thing as margarita pie?

    Margarita's are excellent

    but they are like chili recipes...everybody has one.


    3 oz. Lime Juice
    2 oz. Patron Silver
    1 oz. Grand Marnier
    Splash of Coca-Cola

    Pour over a ice in a glass, stir and enjoy.

    BAJA FISH TACOS (this one is a staple of my diet)

    - deep fry some small finger size filets of a mild fish like Mahi Mahi
    - heat a tortilla and put filet inside
    - spoon over some cole slaw (your favorite recipe)
    - add a couple of slices of avocado
    - spoon over some pico de gallo (tomato, onion, cilantro, garlic)
    - squeeze two Key Lime halves over everything
    - sprinkle on some picante sauce (Tabasco will work)
    - wrap it up and you are in heaven

    MEXICAN MARGARITA this is the real deal.

    Use only 100% Agave tequila. Do not use a blended tequila which is only 51% Agave. It has to say 100% Agave on the label or else it is not good tequila. You have to start with a good tequila before you make a good Margarita. Never use a pre-mixed Margarita mix.

    Damiana is a Mexican liqueur made from the Damiana flower - said to be an aphrodisiac!

    This is the recipe served at the Tequila Sunrise bar in Todos Santos, Baja California.

    3oz - tequila
    1oz - Cointreau
    1oz - Damiana
    juice of 4 fresh Key Limes

    Pour into a glass filled 3/4 full with crushed ice. True Margaritas are never blended, they are served "over the rocks."

    sorbet, curd, pies, merengue(sp), juice and freeze to always have on hand, candy, DRINKS DRINKS AND MORE DRINKS, marinade for a million things, lime chiller bars, cheviche, tarts, cheesecakes, ice cream, chicken wings, reduce the juice down with sugar to make a fun lime gastrique for both sweet and savory applications...the sky is the limit.
