    prepare a pork belly with the skin on to fit in the ChefMaker basket.
    pat dry with a towel and cross-hatch the skin / fat.
    heavily salt the skin side facing up.
    set the pork on the rack in the fridge overnight to draw out the moisture.
    next day, remove all the salt with a brush.
    season the meat side - NO salt - avoid making the pork too salty.
    put the belly back on rack with the skin side facing up.
    place rack with pork in the ChefMaker basket and insert the probe in the thickest part of the belly.
    use probe function and set the target temperature to 180? F. - drop the ambient temperature to 210? F, = as low as it will go.
    cook 1hr until around 165? F. Then, reset the ChefMaker to Airfryer mode and cook at 350? F for 15min.

    I rather have the pork laulau than the chicken lau.lau I just have to throw out the piece of fat in the pork one.

    For those of us that moved away and can't run to 7-11 for our musubi or Uncle Clays for shave ice or Zippys for... well you get it... we can try making the flavors from home ourselves. Try the book Aloha Kitchen by Alana Kysra, or any of the classics by Jean Hee.

    What kind of meat is the Big Island smoked meat ? Pork ?

    It looks amazing. What is the recipe? I might wanna try it here at home.

    Oh, BTW...we have Ono Hawaiian BBQ here mainland side and we love it.

    Anyone tried Turkey-tail Lau-Lau, now that`s some ono stuff. This canoe club was selling for their club and I bought some. Wow, I wen end up buy plenty more and stock-up my freezer. Plus make good kine pu-pu`s with da beer

    Sorry these images are kinda big, but I'm too lazy to resize them...

    We threw a birthday Luau last night for a guest from D.C.. Here's my plate!....

    I think everyone here already knows what each item is. Gotta' say, that squid Luau (Auntie?) came out AWESOME! I made the Kalua Pig and Big Island style Smoked Meat on Saturday in my Weber grill with Kiawe wood. Also winnahz. The laulau (actually just a part of it, shown next to the Chicken Long Rice) was purchased as take-out from Ono Hawaiian Food on Kapahulu. These guys really know how to make good laulau! Between them and Young's, hard fo' pick da' winnah.

    Here's a solo shot I took of the Big Island Smoked Meat I made...


    I learned how to make this from my cousins in Kona. For pupu, it's best served just like that.. with POI! Yeah I know, da' poi looks lumpy, because it is. About a week old and even mo' ono!

    1. kalua pig
    2. lau lau (the chicken kine is good too)
    3. pipi kaula at People's (though I've never tried it at Ono's or elsewhere)
    4. pulehu steak, served pupu-style*

    (*Okay I know that's not specifically Hawaiian and probably isn't AUTHENTIC Hawaiian food, but list it because I equate the pulehu method, using Hawaiian salt as a seasoning, with Hawaiian food, so there.)

    5. lomi tomato ... I mean, salmon
    6. haupia and kulolo -- no can decide which I like better
