  • Re: What's for Dinner - Chapter 3

I had plans for Nico's this afternoon, but the need for sleep trumped the need for good food today, so I instead had two cheeseburgers from the BK drive-through and a long nap.

Teri beef, rice and salted cabbage... from the Maui County Fair. YUK!!! I have that every year, because we buy tickets for a fundraiser.

I'm making portuguese bean soup. It's been in the slow cooker all day... should be ready by dinnertime.

Edited: We still have more teri beef leftover... awful stuff, no one wants to eat it.

Chicken salad from Sam's Club, added a can of Spam to it and a can of Mountain Dew to wash it down.

                    Sicilian Chicken @ Assagio's.

A lil' too much potato, and not quite enough chicken. Good flavor, though.

Grilled chicken thighs (made in my new indoor grill). Also grilled some zucchini and eggplant, sliced them and tossed in a salad.

Still got some leftover teri meat. I'm sneaking it into my husband's lunch tomorrow... hehe.

Made a pizza dough with rosemary from my garden, and a homemade tomato sauce with olive oil, tons of garlic, rosemary, sea salt, pepper, cane sugar and basil. Gonna go put on the grill now and put on some fresh mozz and parm and more basil. Rainy day out here, love a slow cook sauce....

Zippy's chili with red redondo's hotdogs, baby!

It don't get much better than that.

Eggplant parmagiana a la Mario Battali and fresh-baked oat flour bread. Yum.
