I've always been a 3-nut man myself.

For some reason, that doesn't sound right.

Actually though, Alicia's large Virginia peanuts (as shown) makes having just 2 nuts more than adequate.

Thanks everyone. I tried it, and it's pretty good! I found a one pound bag at Foodland. I used half bag for my first attempt. First, I rinsed and soaked in water for about 3 hours. Simmered for about an hour, and let it soak for another hour. It's nice and slightly crispy the way I like it, but my husband likes it softer, so right now I'm letting it simmer a little more. I used about 2 T Hawaiian salt, and later added another T because it wasn't salty enough. Also a small piece of star anise and garlic, but I can't taste either.

I can't wait to find some Virginia peanuts! Thanks again, I wish I could share with everyone!
